Development of a milk-containing drink fermented with chickpea extract | Разработка напитка молокосодержащего, сквашенного с экстрактом нута

anglais. The milk drinks containing plant extracts fermented with probiotic lactic acid bacteria, are of growing interest due to their properties that might compensate for nutrient deficiencies. In this research chickpea (Cicer arietinum L.) has been used, and lactic acid bacteria isolated from naturally fermented products have identified and registered at the National Bioresource Center of the National Research Center "Kurchatov Institute". Probiotic and technological properties of them, including the utilization of anti-nutritional factors of chickpea, have been studied. Latilactobacillus sakei SD-8, Levilactobacillus brevis VY-1, Lactiplantibacillus plantarum PC-7, Leuconostoc mesenteriodes CH-5 and Lacticaseibacillus paracasei CA-6 proved to be the most viable strains under gastrointestinal tract conditions. All the studied strains fermented milk well and formed a dense clot. The active acidity (pH) values were in the range from 4.43 to 5.65. The most effective strains for raffinose utilization were Latilactobacillus sakei SD-8, Leuconostoc mesenteriodes CH-5 and Levilactobacillus brevis VY-1. The strains Limosilactobacillus fermentum SB-2, Latilactobacillus sakei SD-8, Lactiplantibacillus plantarum PC-7 and Leuconostoc mesenteriodes CH-5 were selected for the drink production. The first three strains inhibited growth of Salmonella typhimurium 5715, Proteus vulgaris 14 and Staphylococcus aureus subsp. aureus 209P. Two compositions were created: 1) with Limosilactobacillus fermentum SB-2 and Latilactobacillus sakei SD-8, 2) with Lactiplantibacillus plantarum PC-7 and Leuconostoc mesenteriodes CH-5. The strains were introduced into the product in the amount of 1*10E7 CFU/mL. The drink was produced by fermenting 45% of chickpea extract and 55% of cow milk at 37 deg. C for 24 hours. Both obtained drinks met the microbiological requirements and had a pleasant sour-milk taste, but the first had floral notes, and the second – a bean aftertaste. Composition No. 1 showed the best organoleptic characteristics.

Наблюдается рост интереса к молочным напиткам с растительными экстрактами, ферментированным пробиотическими молочнокислыми бактериями, которые благодаря своим свойствам могут компенсировать дефицит питательных веществ. В исследовании использовался нут (Cicer arietinum L.), а молочнокислые бактерии, выделенные из естественно ферментированных продуктов, были идентифицированы и зарегистрированы в Национальном Биоресурсном центре ВКПМ НИЦ "Курчатовский институт". Изучены их пробиотические и технологические свойства, включая утилизацию антипитательных факторов нута. Наиболее жизнеспособными штаммами в условиях желудочно-кишечного тракта оказались Latilactobacillus sakei SD-8, Levilactobacillus brevis VY-1, Lactiplantibacillus plantarum PC-7, Leuconostoc mesenteriodes CH-5 и Lacticaseibacillus paracasei CA-6. Все изучаемые штаммы хорошо сквашивали молоко и образовывали плотный сгусток. Значения активной кислотности (pH) были в пределах от 4,43 до 5,65. Наиболее эффективными штаммами по утилизации раффинозы стали Latilactobacillus sakei SD-8, Leuconostoc mesenteriodes CH-5 и Levilactobacillus brevis VY-1. Для производства напитка были отобраны штаммы Limosilactobacillus fermentum SB-2, Latilactobacillus sakei SD-8, Lactiplantibacillus plantarum PC-7 и Leuconostoc mesenteriodes CH-5. Исследования показали, что первые три штамма ингибируют рост Salmonella typhimurium 5715, Proteus vulgaris 14 и Staphylococcus aureus subsp. aureus 209P. Были созданы две композиции: 1) с Limosilactobacillus fermentum SB-2 и Latilactobacillus sakei SD-8, 2) с Lactiplantibacillus plantarum PC-7 и Leuconostoc mesenteriodes CH-5. В продукт вносились штаммы в количестве 1*10E7 КОЕ/мл. Напиток произведен путем сквашивания 45% экстракта нута и 55% коровьего молока при 37 град. С в течение 24 ч. Оба полученных напитка соответствовали микробиологическим требованиям и имели приятный кисломолочный вкус, однако первая отличалась цветочными нотками, а вторая – бобовым послевкусием. Композиция № 1 показала наилучшие органолептические характеристики.
