Prion diseases are fatal neurodegenerative diseases that can affect a range of mammalian species, including humans. Because of the extremely high resistance of these disease agents to common inactivation procedures, regular food processing does not reduce the infectivity in prion-contaminated food or feed. It therefore must be ensured that all materials used for human consumption or for farm animal feed are free from bovine spongiform encephalopathy infectivity. This chapter elaborates on the molecular basics of prion diseases and on the control measures that are in place to ensure the highest possible level of consumer protection.
