Qualidade química, tecnológica e sensorial de substitutos de carne e elaboração de hambúrgueres à base de biomassa de banana verde, grão-de-bico e teff

No século XXI, transformações socioeconômicas e transição nutricional impulsionaram novas escolhas, como o vegetarianismo e o veganismo, em resposta ao crescimento populacional e às novas demandas alimentares. Portanto, a indústria de alimentos, percebendo as alterações nas rotinas alimentares seletivas, juntamente com as mudanças climáticas e as tendências das escolhas dos alimentos, vem trabalhando em função de novos produtos, e entre esses alimentos estão os meat plant-based e os hambúrgueres análogos à carne. Os produtos análogos à carne têm se destacado como uma resposta à demanda por substitutos cárneos que mimetizam as qualidades sensoriais da carne, como sabor e textura. Portanto, o objetivo deste estudo foi desenvolver hambúrgueres vegetais utilizando biomassa de banana verde associado ao cereal teff, analisar a qualidade química, física e sensorial dos produtos elaborados, bem como avaliar as características de hambúrgueres híbridos e vegetais. Inicialmente, foi realizada uma revisão integrativa da literatura com foco em hambúrgueres como alternativas à carne, enfatizando produtos híbridos e os totalmente vegetais. Os estudos experimentais foram elaborados e analisados nos Laboratórios de Técnica Dietética e Compostos Bioativos da UFRGS. Para a produção dos análogos à carne, utilizou-se biomassa de banana verde, farinha de teff marrom e grão-de-bico enlatado, em proporções: T1 (100% BBV), T2 (75: 12,5: 12,5%), T3 (60: 20: 20%) e T4 (50: 25: 25%) respectivamente. Os produtos desenvolvidos foram submetidos às análises físicas (pesos, diâmetros e altura inicial e final), químicas (pH, centesimal, fibras) e sensoriais (intenção de compra, índice de aceitabilidade e comparação estatística entre os grupos não-vegetarianos e vegetarianos). Em fibras insolúveis as médias para os hambúrgueres de biomassa de banana foram (3,03% - 3,55%) e F6 (3,25%). Os resultados das análises sensoriais revelaram que, para os avaliadores não-vegetarianos, todos os tratamentos tiveram médias acima de 6,0, indicando "Gostei ligeiramente". Para os avaliadores vegetarianos, as médias foram superiores a 7,0 e o índice de aceitabilidade foi acima de 75%. Com relação à intenção de compra para este grupo, F2 foi o tratamento com uma média de 4,0, indicando que a maioria dos avaliadores marcou "Possivelmente compraria" na escala. Ao realizar uma comparação entre os grupos (não-vegetarianos e vegetarianos) estatisticamente, foram demonstrados que na avaliação sensorial das diferentes formulações (T1; T2; T3; T4) obteve resultados comprovando a similaridade entre eles e a diferença entre as análises dos grupos. Isso sugere que nenhum tratamento foi preferido em relação aos outros, e todos apresentaram níveis semelhantes de aceitação. Pode-se concluir que os hambúrgueres formulados com biomassa de banana verde, associado a teff e grão-de-bico, possuem características químicas, físicas e sensoriais promissoras, com bom potencial para substituir produtos à base de carne, especialmente quando se busca opções com menor teor de gordura e calorias. Sensorialmente, os hambúrgueres de BBV atenderam aos atributos sabor, cor, aparência, textura e aceitação global, principalmente por parte dos grupos adeptos ao vegetarianismo.

In the 21st century, socioeconomic transformations and nutritional transition have driven new choices, such as vegetarianism and veganism, in response to population growth and new food demands. Therefore, the food industry, noticing the changes in selective eating routines, along with climate changes and food choice trends, has been working on new products, and among these foods are meat plant-based items and meat analog burgers. Meat analog products have stood out as a response to the demand for meat substitutes that mimic the sensory qualities of meat, such as flavor and texture. Therefore, the objective of this study was to develop plant-based burgers using green banana biomass combined with teff cereal, analyze the chemical, physical, and sensory quality of the developed products, as well as evaluate the characteristics of hybrid and plant-based burgers. Initially, an integrative literature review was conducted focusing on hamburgers as alternatives to meat, emphasizing hybrid products and fully plant-based ones. The experimental studies were developed and analyzed in the Dietary Technique and Bioactive Compounds Laboratories at UFRGS. For the production of meat analogs, green banana biomass, brown teff flour, and canned chickpeas were used in the following proportions: T1 (100% GBB), T2 (75: 12.5: 12.5%), T3 (60: 20: 20%), and T4 (50: 25: 25%) respectively. The developed products were subjected to physical analyses (weights, diameters, and initial and final heights), chemical analyses (pH, centesimal, fibers), and sensory analyses (purchase intention, acceptability index, and statistical comparison between non-vegetarian and vegetarian groups). In insoluble fibers, the averages for the banana biomass burgers were (3.03% - 3.55%) and F6 (3.25%). The results of the sensory analyses revealed that, for non-vegetarian evaluators, all treatments had averages above 6.0, indicating "Slightly liked." For the vegetarian evaluators, the averages were above 7.0 and the acceptability index was above 75%. Regarding the purchase intention for this group, F2 was the treatment with an average of 4.0, indicating that most evaluators marked "Possibly would buy" on the scale. When making a statistical comparison between the groups (non-vegetarians and vegetarians), it was demonstrated that in the sensory evaluation of the different formulations (T1; T2; T3; T4), results showed similarity among them and differences between the analyses of the groups. This suggests that no treatment was preferred over the others, and all showed similar levels of acceptance. It can be concluded that the burgers formulated with green banana biomass, combined with teff and chickpeas, possess promising chemical, physical, and sensory characteristics, with good potential to replace meat-based products, especially when looking for options with lower fat and calorie content. Sensorially, the BBV burgers met the attributes of flavor, color, appearance, texture, and overall acceptance, especially among groups inclined towards vegetarianism.
