Small scale fish processing sand storage: practices, problems and policy implications for the Eastern and Southern African Countries

The mandate of this paper and consequently the workshop for which it is intended emanates from the 1992 - 1993 programs of work and priorities of the Lusaka based MULPOC which provides for a workshop in Food Processing with particular emphasis on fish processing and storage. Indeed increase in annual Fish Production and concomitant fish consumption is among the recommendations contained in the Lagos Plan of Action of 1980 (LPA). among the various recommendations made concerning the fisheries sub-sector the LPA recommend improvements of traditional fish processing methods and storage infrastructure in Africa, and indeed this includes the Eastern and Southern Africa Sub-region. This paper will therefore focus on small scale fish processing methods within the inland fisheries category. The next chapter will develop the conceptual framework in fish processing While chapter III will focus on fish processing methods in the artisan sector. The fourth reviews fish storage methods followed by a review of quality control in chapter;while chapter six makes some suggestions on future national and sub-regional programs in addition to highlighting policy implications for the Eastern and Southern Africa sub-region. the seventh and last chapter contains a number of conclusions and recommendations.
