Comparación del perfil de ácidos grasos, contenido de grasa y proteína de la carne de búfalo respecto a la carne de vacuno

El objetivo de este estudio fue comparar la composición de ácidos grasos, proteína y grasa del músculo dorsal largo (lomo), semitendinoso (bola de pierna) e hígado de la carne de búfalo y de vacuno. Los animales proceden del Magdalena Medio en condiciones de pastoreo, los cuales se tomaron al azar 4 lotes de diferentes fincas y cada lote de 5 animales, para un total de 20 búfalos y 20 vacunos. El análisis de los ácidos grasos se realizó por cromatografía de gases, la proteína por método de Kjeldahl y grasas por el método de Soxhlet. El total de ácidos grasos saturados (SFA) en el búfalo como en el vacuno fue alto, característico de los rumiantes y entre las dos especies no presentaron diferencias significativas. The purpose of this study was for the comparison of the fatty acids, protein and fat found in following cuts of meat, the long dorsal muscle (prime, sirloin), the semi-tendonous muscle (leg, rump) and the liver of both buffalo and the bovine animals. This livestock in the study grazed in grass pasturs in the region of the Magdalena river valley, they were chosen randomly of four different lots from different ranches, each lot composed of five animals for a total of 20 buffalos and 20 bovines.
