Milk and milk products originating from the system of organic production are labeled organic milk, and the price of such products is higher in relation to the price of milk from conventional production.Although the benefits that organic production has for biodiversity and the environment are known and proven, there are still controversial views regarding the benefits of organic milk in terms of safety, composition and sensory properties.According to the existing legal regulations, food placed on the market must meet food safety require ments regardless of the method of production. Several studies have identified some differences and advantages that can be attributed to milk originating from organic production. No significant differences were found in the total con centrations of saturated and monounsaturated fatty acids, however, a higher concentration of total polyunsaturated fatty acids in milk originating from or ganic production was found.Regarding the nutritionally desirable ingredients of milk: microelements, vitamins, antioxidants, unsaturated fatty acids (ω3, CLA conjugated liolic acid), several scientific studies have found that there is a trend in favor of higher levels of nutritionally important components in milk from organic production. Variations of nutritionally important ingredients are not only a consequence of the method of production but are the result of all influences (diet, cultivation methods and seasons).
