ACID HIDROLYSIS OF ALOE VERA (SABILA) BAGASSE FOR OBTAINING PECTIN | HIDRÓLISIS ÁCIDA DEL BAGAZO DE ALOE VERA (SÁBILA) PARA LA OBTENCIÓN DE PECTINA

anglais. The processing of Aloe vera (sábila in sp.) has reached a great development during the last years, since its products are raw material for other industries. This has contributed to the increase of solid residues, which are not utilized to obtain added value products in the same industry. In this research, the acid hydrolysis method for pectin extraction from the Aloe vera bagasse was studied. Firstly, the bagasse was characterized determinig: humidity, ashes, proteins, acidity, and total content of pectin, density and pH. pH, temperature, extraction time, particle size and speed of agitation were analyzed as variables of study or factors and pectin yield (%) as response variable. The best results were obtained at 90°C,1000 min-1 and the larger particle size that were the significant variables with 95 % of confidence. Pectin was characterized chemically and for infrared spectroscopy (FTIR). It was concluded that this pectin was of fast gellification variety, water-soluble and of high methoxyl content. The characteristic peaks of the functional groups of pectin were observed in infrared spectroscopy (FTIR) analysis.

espagnol; castillan. El procesamiento de la sábila (Aloe vera) ha alcanzado un gran desarrollo en los últimos años, ya que sus productos son materia prima para otras industrias. Esto ha contribuido al incremento de residuos sólidos, los cuales no son aprovechados para la obtención de productos de valor  agregado en la propia industria. En esta investigación se estudió la hidrólisis ácida como método de extracción de pectina a partir del bagazo de sábila. Primeramente, se caracterizó el bagazo determinándose: humedad, cenizas, proteína, acidez, contenido total de pectina, densidad y pH. Fueron analizadas como variables de estudio o factores: el pH, la temperatura, el tiempo de extracción, el tamaño de partícula y la velocidad de agitación y como variable respuesta el rendimiento de pectina (%). Los mejores resultados se obtuvieron a 90°C, 1000 min-1 y el mayor tamaño de partícula, que resultaron las variables con influencia significativa con un 95% de confianza. La pectina se caracterizó químicamente y por Espectroscopía IR. Se obtuvo que la misma es de gelificación rápida, soluble en agua y de alto metoxilo. En el espectro IR se observan los picos característicos de los grupos funcionales de la pectina.
