Growth Characteristics, Protein, Fiber and Chlorophyll Contents of Eight Amaranth Cultivars | ลักษณะการเจริญเติบโต ปริมาณโปรตีน เส้นใย และคลอโรฟิลล์ ในผักโขม 8 สายพันธุ์

anglais. Amaranth is cultivated in all regions of Thailand, their leaves and young shoots are used for cooking. However, information of the amaranth plantation in the pot system which is suitable for people who live in restricted or less areas still have limited. Therefore, the objective of this study was to screening the amaranth cultivars that has potential or suitable to promote for household consumption from the 8 cultivars including red Chinese amaranth, green Chinese amaranth, white stem-green Chinese amaranth, red blush-green Chinese amaranth, weed amaranth, Thai amaranth, light green amaranth and red stem-green amaranth. The study focused on their growth characteristics including protein, fiber, chlorophyll a, chlorophyll b and fiber contents. Harvesting periods were set at 20 days (vegetative stage) and 40 days (reproductive stage) after transplanting. Results revealed that the red blush-green Chinese amaranth (TA 026) and Thai amaranth (AS 129) were higher growth rate than other cultivars while red Chinese amaranth and green Chinese amaranth (TA 024) were rather lower growth rate. For the nutritional analysis in terms of protein, chlorophyll a and chlorophyll b, the weed amaranth (SR 01-0835) and Thai amaranth (AS 129) had high contents at the vegetative stage. At the reproductive stage, Thai amaranth (AS 129) was still keep high contents in protein, chlorophyll a and chlorophyll b. The fiber contents were presented highest in weed amaranth (SR 01-0835) and red blush-green Chinese amaranth (TA026) was highest in fiber contents. From this study, we concluded that growth rate and nutrition values of the eight amaranth cultivars was declining when reached the reproductive stage. The results revealed that the Thai amaranth (AS 129) had a dominant variety both in high growth rate and nutritional values, therefore, it is suitable to be promoted to the public for household consumption particularly in the pot system

thaï. ผักโขม (amaranth) เป็นพืชที่ปลูกได้ในทุกภูมิภาคของประเทศไทย และมักนำใบและยอดอ่อนมาปรุงเป็นอาหาร อย่างไรก็ตาม ข้อมูลการปลูกผักโขมในระบบกระถางซึ่งมีข้อดี คือ เหมาะสำหรับคนที่อาศัยในพื้นที่จำกัดเนื่องจากใช้พื้นที่น้อย ยังมีการศึกษาไม่มากนัก การศึกษานี้จึงมีวัตถุประสงค์เพื่อคัดเลือกพันธุ์ผักโขมที่มีศักยภาพจาก 8 สายพันธุ์ สำหรับการส่งเสริมให้ประชาชนนำไปใช้เพื่อการบริโภค ได้แก่ ผักโขมจีนใบแดง ผักโขมจีนใบเขียว ผักโขมจีนใบเขียวต้นขาว ผักโขมจีนใบเขียวปื้นแดง ผักโขมวัชพืช ผักโขมไทย ผักโขมใบเขียวอ่อน และผักโขมใบเขียวต้นแดง ซึ่งทำการศึกษาลักษณะการเจริญเติบโต ปริมาณโปรตีน เส้นใย คลอโรฟิลล์เอ คลอโรฟิลล์บี โดยกำหนดการเก็บเกี่ยวที่ 20 วัน (ระยะสร้างลำต้นและใบ; vegetative stage) และ 40 วัน (ระยะออกดอก; reproductive stage) หลังย้ายกล้า ผลการศึกษาพบว่า ผักโขมจีนใบเขียวปื้นแดง (TA 026) และผักโขมไทย (AS 129) มีอัตราการเจริญเติบโตดีกว่าพันธุ์อื่น ๆ ในขณะที่ผักโขมจีนใบแดงและผักโขมจีนใบเขียว (TA 024) มีอัตราการเจริญเติบโตค่อนข้างต่ำ ส่วนคุณค่าทางโภชนาการนั้น พบว่า ที่ระยะการเก็บเกี่ยว 20 วัน ผักโขมวัชพืช (SR 01-0835) มีปริมาณโปรตีน เส้นใย คลอโรฟิลล์เอ และคลอโรฟิลล์บี สูงที่สุด รองลงมา คือ ผักโขมไทย (AS 129) ส่วนที่ระยะการเก็บเกี่ยว 40 วัน ผักโขมไทย (AS 129)  ยังคงมีปริมาณโปรตีน คลอโรฟิลล์เอ และคลอโรฟิลล์บี สูงที่สุด ในขณะที่ผักโขมวัชพืช (SR 01-0835) และผักโขมจีนใบเขียวปื้นแดง (TA 026) มีปริมาณเส้นใยสูงสุด จากผลการศึกษาสรุปได้ว่าผักโขมทุกสายพันธุ์มีแนวโน้มของอัตราการเจริญเติบโต และคุณค่าทางโภชนาการลดลงเมื่อเข้าถึงระยะออกดอก จากผลการศึกษา พบว่า ผักโขมไทย (AS 129) เป็นผักโขมที่มีลักษณะเด่นที่สุดทั้งในแง่ของการเจริญเติบโตและคุณค่าทางโภชนาการ ดังนั้นจึงเป็นพันธุ์ที่มีความเหมาะสมที่สุดในการนำไปส่งเสริมให้ประชาชนนำไปปลูกในกระถางไว้สำหรับการบริโภคภายในครัวเรือน
