espagnol; castillan. El objetivo del presente trabajo fue la determinación de la durabilidad de la galleta "Riki". Las galletas se evaluaron inicialmente para comprobar el cumplimiento de sus especificaciones de calidad y perióodicamente hasta el fallo, en lo referente a contenido de humedad y evaluación sensorial. Se determinó el espesor y la permeabilidad al vapor de agua del material de envase, así como la resistencia al sellado térmico de las bolsas. La durabilidad de la galleta Riki enva- sada en polipropileno metalizado en paquetes de 140 g fue de 226 días.

Physic - chemical and sensory analysis at the beginning, were determined in accordance to national quality standards, and in the time until the product fault. It was determined the thickness and the water vapour permeability to the packaging material as well as the resistance to the thermal sealing of the bags. The shelf life of cookies "Riki" packed in metalized polypropylene in packages of 140 g was 226 days.
