MANUFACTURE OF SWEETENED FULL-FAT YOGHURT WITH DIFFER-ENT CALORIES CONTENT

The present study was carried out as an attempt to manufacture and study the properties of sweetened full-fat yoghurt with different calories content by using 9% sucrose (Sug), 0.015% sucralose (Suc), 5% prepared dates powder (DP) and whole cow's milk . Changes in pH values during fermentation period were followed. The resultant yoghurt was analyzed for chemical composition, some physical and sensory properties as well as the energy content for the fresh and stored yoghurt. The results showed that, treatments had insignificant effect on the activity of yoghurt starter culture. Sug and Suc had insignificant effect on the acidity and pH either in fresh or stored yoghurt, whereas the use of DP increased them significantly. No significant increase in acidity or decrease in pH values were recorded during storage period. TS, ash and carbohydrates contents were greatly affected due to adding 9% Sug and 5% DP, whereas fat and protein were not affected by the used additives, while due to storage period the effects were insignificant. Sug and DP treatments had the highest significant energy values (97.26 and 82.76 kcal/100 g in order), while Suc gave an opportunity to prepare sweetened low-calorie yoghurt with insignificant differences compared to the control. The significant increase in curd tension (CT) in Sug-yoghurt was accompanied by lower curd syneresis (CS) in most cases as compared with those of the control samples. Sensory properties were not significantly affected by treatments, but sucralose caused more smoothness and sweetness when compared with sucrose. DP-yoghurt had slightly brown colour which was colour for set yoghurt. In general, all samples were free from bitterness rejected by some panelists and accepted by others, who found it an accepted no, cooked and foreign flavours.

Si application alleviates influence of some abiotic stresses on crop plants. Meanwhile, scarce information is avaiable about the significance of Si for helping the plants to overcome the injuries of N deficiency and herbicides pressure. Thus, two–year 2–field experiments were carried out in wheat. Experiment I involved three Si concentrations (Si0ppm, Si250ppm and Si500ppm) and two N levels(N100% and N50%). Experiment II examined four combinations of fenoxaprop–p–ethyl and Si: fenoxaprop–p–ethyl+Si250ppm and fenoxaprop–p–ethyl+Si500ppm (each either in sequence or in tank mixture), fenoxaprop–p–ethyl alone, hand weeding and weedy check. Under N deficiency (N50%), Si500ppm increased plant height as compared to the control. No significant differences in SPAD values were detected amongst Si concentrations under each of the two tested N levels. Si can partially alleviate negative N deficiency effect on wheat yield, causing its increase to level obtained under normal N supply. Si has no effect on weed biomass when applied with fenoxaprop–p–ethyl either in sequence or in tank mixing. The most promising treatment for maximizing wheat grain yield was the application of 100 kg N ha–1 (N50%) x fenoxaprop–p–ethyl+Si250ppm in sequence", which also, in the same time, means reducing both cost of crop production and environment pollution.

Two field experiments were conducted during the two successive seasons of 2011/2012 at the Experimental Farm, Kaha station, Qulubia Governorate to study the effect of using four levels of water regime ,i.e. 60%, 80%, 100 and 120% from class A pan evaporation and five safety materials, i.e. water (as control),amino-z, lithovit (a natural intensified CO2 foliar fertilizer ) as foliar spray on snap bean plants as well as the biofertilize mycorrhizal as a seed treatment before sowing and sap material as a absorbent polymer to increase with holding water capacity before sowing and the effect of that on growth, green snap bean yield Poulista cv ., physical and chemical characters as well as water use efficiency. The results indicated that, mycorrhizal seed treatment, lithovit foliar spray and soil treatment with sap material gave the highest values of green pod characters as well as the vegetative growth, in addition all the safety material used led to significant increment on pod yield and the favorable treatments were obtained by using sap material and foliar spray with amino -z. Concerning to using safety materials with water regime levels, it was found that, spraying snap bean plants with amino- z and irrigation with 120% levels from class A pan evaporation was the superior treatment on green pod yield followed by soil treatment with sap material with 60% of water level. Regarding to the mean of green pod weight, the results showed that treating seed with mycorrhizal and 120% level of water regime gave the highest values during the two seasons, then the treatment of foliar spray with lithovite with 80% level of water regime and the treatment by sap soil treatments with supplied by 60% of water irrigation. Concerning to water use efficiency, the data showed that supplied the plants with the highest amount of water 120% and 100% from water irrigation decreased the values of water use efficiency, on the contrary , it can obtained the highest values of water use efficiency from water supplied with 60% then 80% calculated by class A pan evaporation method. Regarding to the effect of safety material on water use efficiency, it was found that, sap treatment or foliar spray with amino-z then, mycorrhizal treatments gave the highest value of water use efficiency. Generally, it can recommend by using sap material of soil addition before sowing and foliar spray by amino- z followed by treating the seeds with mycorrhizal with irrigation level 60% or 80%to obtained the favorable green pod yield and the favorable water use efficiency.

This work aimed to study the effect of partial replacement of monosodium glutamate (MSG) by 5΄ inosine monophosphate (5΄-IMP) on the fertility of male rats after oral administration for 90 days. Before the biological treatment, a half amount of MSG as flavor enhancer in chicken burger was replaced by 5´IMP. The sensory assessment of cocked chicken burger confirmed that this used mixture (1:1 w/w) had a synergistic effect and led to improve the flavor intensity compared to that with MSG. Treatments were applied by stomach tube (mg/kg BW); (i) MSG, [60 for adult; 30 for weaned rats]; (ii) Mixture (1:1; w/w) of MSG and 5΄-IMP [30:30 for adults; 15:15 for weaned rats] and (iii) 5΄-IMP [30 for adult; 15 for weaned rats]. Body weight gain (BWG%) and weight of some reproductive organs including testes, prostate, cauda epididymes and seminal vesicles were measured. Serum testosterone and interstitial cell-stimulating hormone (ICSH) and seminal fructose content were assayed. Spermatozoa activity and the histology of reproductive organs were also studied in adult and weaned male rat groups. Severe negative effects on most studied parameters were demonstrated in MSG-groups, where the lowest fructose content in prostate, testosterone levels and spermatozoal activities were recorded. Reduction in the weight of cauda epididymes and testes was recorded in MSG-treated weaned rats. Histologically, all studied reproductive organs were dramatically affected by MSG-treatment. Considerable enhancements in the studied parameters and normal histological profiles were obtained due to the partial replacement of MSG by 5΄-IMP. In conclusion, 5΄-IMP has a potential protective effect against MSG-hazards in reproductive organs.

This study was conducted to revise the taxonomic identity and clarify specific relationships among the studied Triticum species in Egypt. The studied species included; T. dicoccum (Schrank) Schubl.; T. dicoccoides (Koren ex Asch. & Graebn.) Aaron Sohn. T. tugidum L.; T. durum Desf.; T. pyramidale (Delile ex Schult.) Percival and T. aestivum L. Moreover, the wild Emmer Wheat T. dicoccoides (Koren ex Asch. & Graebn.) Aaron Sohn was recently found in Egypt as a new record. The genus Triticum L. includes 14 species, all of them are cultivated for food except the wild Emmer.

The agricultural sector is one of the most important productive sectors in the Egyptian economy. However, the share of the agricultural sector of the investments did not exceed 3% of the national investments in 2011. Therefore, the present study aims to; identify the current status of agricultural investments by studying the fairness of the distribution of national investments among different economic sectors, and estimate of agricultural investments in light of the agricultural development strategy 2030. The results showed that the percentage of investment directed to agricultural sector ranged between 2.91 and 14.21 in years 2010 and 2002 respectively during the period 1995-2011. On the other hand, the public agricultural investment was 2.67 billion L.E (on average) representing 43.89% of the total agricultural investment, while the rest 56.11% was for private agricultural investment. The percentage of justice in the distribution of investments - among commodity sectors- according to the sectoral contribution output criteria in the national economy was about 75.3%. By investigating of the most important determinants of agricultural investment, the results showed that about 78.3% of the changes in the value of investments in the agricultural sector are interpreted by the interest rate on agricultural loans, the interest rate on bank loans, the rate of inflation, and the exchange rate U.S. $ / pound. On the other hand, workers' wages in pounds/day, the value of agricultural savings LE million, the value of private equity in millions of pounds explain about 96.3% of the total changes in the value of investments in the agricultural sector. In addition, the value of investments variables such as non-agricultural and agricultural loans, public investment, and agricultural output explain about 92.4% of the changes in the value of agricultural investment. The study concludes with a set of important recommendations, including the need to develop and modernize the investment laws and legislation in line with the developments of the local and global changes. Work on a policy commensurate with the investment attributes in the Egyptian agricultural sector such as the disintegration of tenures, the need to restructure the agricultural Banks for Development and Credit to play its important role of credit through the diversification of sources and the establishment of new branches in attractive areas for investment.

Saudi Arabia is its unproductive for vegetable oils in terms of the Kingdom of import and re-export of imported some oils such as corn oil, sunflower oil and olive oil. The quantity and value of exports and imports of these oils are more than a year, however, excluded from that increase the amount of imports of corn oil, the higher the amount of exports of corn oil and olive and palm Also oil sunflower during the study period, while decreased the amount of exports of sesame oil during the study period also increased the amount of Imports of corn oil, olive, palm and sesame, soy and sunflower increase of about 50.87%, 75.6%, 79.3%, 1141.3%, 50.9% and 611.2%, respectively, during the study period, the study shows the average monthly consumption of the average household Per capita consumption in the research sample was about 0.66, 0.39, 0.48, 1.25, 0.75 per month per liter of corn oil, olive, palm and sesame, soy and sunflower, respectively, and study the average household monthly spending shows that average household spending in research sample amounted to about 35.2, 39.6, 11.0, 9.2, 30.8 riyals per month for each of corn and olive oil, palm and sesame, soy and sunflower. And study the impact of the level of high oil prices on consumption study sample turned out to be about 61.25% of the study sample affects the families of high oil prices on oil consumption. Estimate function per capita expenditure on oil through the sample research was estimated flexibility expenditure Oils for about 0.21, meaning that individual request oils increase by less than increasing per capita income, as an increase in income by about 10% lead to increased consumer spending on oil by about 2.1%, which means that spending on inelastic oils and oils from the goods necessary for the individual. Assessment of the factors affecting the consumption of oils through the sample research shows that the number of individuals is most influential as the change rate of one individual in the family leads to a change of $ 1.2 riyals in spending on oil while the change rate of one riyal in income leads to a change of $ 0.008 riyals in spending vegetable oils. Also all the different income groups both equally among them in terms of importance in influencing the variation consumption of vegetable oils.

Poverty represents one of the development challenges that faces the developing countries in general and Egypt in particular. Though poverty alleviation came on the top priorities of the third millennium goals, as in 2002 about 20.4% of Egyptian people were suffering from objective (absolute) poverty which means that about 13.7 million people are unable to fulfill their basic needs and about 31.8% suffer from subjective poverty. Poverty risk looks ostensibly equal between men and women, but women in general and female headed households suffer more. Therefore small-scale enterprises are one of the mechanisms that lead to poverty alleviation especially among females. This requires coordination among all relevant stakeholders governmental and non- governmental, besides to reform the financial sector and stimulate it to deal with local and financial needs of small-scale enterprises, and to facilitate poor people’s access to appropriate financial services. In light of the previous review, the current study aims at describing poverty status in Egypt and the system that incubate small-scale enterprises and stakeholders as well as beneficiaries and rural women in particular. The study depended on review of literature and secondary data and case studies that reflects one of the civil society organizations experience working in development through providing small-scale enterprises for poor people in rural areas. The case studies covers three governorates: Fayoum, Beni-suef and Menia with a total number of 20 case studies who received livestock production projects with no interest rate, aiming at identifying the problems and solutions to improve the performance of small-scale enterprise providers as well as beneficiaries. The results revealed that successful stories can be attributed to the strong will of beneficiaries to improve their livelihoods, besides the role of the organization in collaborating with local leaderships within the villages, which helped to identify and monitor those beneficiaries. Based on contracting between the provider and beneficiaries to guarantee rights and obligations of both partners, also providing training and follow-up and evaluation played great role in the success of the projects and its sustainability. As for the failures, it was related to poor capabilities of the beneficiaries (widowers) who were affected by various challenges one of which is socialization, lack of skills and health problems.

This study explored the opinions of central level extension employees about whether the Egyptian agricultural extension system needs to be reformed or not, and the alternatives they consider to be the best-fit options for extension in Egypt. The study covered 98 extension employees at the central level; findings show that all aspects of the Egyptian extension system are good candidates for reform and possible restructuring. These aspects could be ranked as financing, policy & organizational structure, staffing, and field operations as reported by 100%, 95%, 91%, and 68% of the respondents, respectively. Concerning the overall extension system, about 91% of the respondents reported that the Egyptian extension system is a good candidate for reform and possible restructuring. Findings also show that devolution, deconcentration, and delegation were the appropriate arrangements for extension decentralization as mentioned by 85%, 82%, and 55% of the respondents, respectively. Moreover, alternatives of providing and financing extension services were suggested and prioritized.

Mountain goat in Syria is one of important domestic animals, because its characters can produce and reproduce under the hard environmental conditions, it was used in crossbreeding with Syrian goat as a donor to acclimatization and resistance of diseases traits. In spite of that, this animal is still faraway from the scientific search, Moreover, it was exposed to random crossbreeding with Shami Goat by goat breeders, of which will lead in a long time to loss an important domestic animal genetic source, some of it,s characterizes were not detected. In this search, the genetic diversity among samples of pure mountain goat that exist in Era Station Search in AL-Sowidaa by using (SNP-PCR) was studied. The results indicated that this technique is successful for defining the genetic similarity and variance among samples of goats that under study, Moreover, the locations of some important genes were discovered, and that will help us in starting of genetic mapping for this economic animal.
