Lee, S.M.(Incheon Metropolitan City Institute of Health and Environment, Incheon, Republic of Korea)E-mail:lsm2000@incheon.go.kr | Yoo, H.S.(Seoul National University, Seoul, Republic of Korea) | Hong, C.H.(Kangwon National University, Chuncheon, Republic of Korea)
An egg has been considered as one of the most important food sources because of it's nutritional superiority and reasonable price. With the complexity of egg flow system from production to consumption in Korea, preventive measures for egg safety have been required. Therefore, our study was carried out to analyze hazards for the egg under farm level and develope preventive measures with a purpose of obtaining egg safety. To analyze biological hazards, microbial contamination of egg(normal, dirty and cracked), water, feed, manure and equipments associated with laying were investigated.

Malik, R.K. | Tuli, R.K. | Dipanker, | Singh, Pardeep
The effect of two thawing temperatures (37°Cfor30 sec. and 60°Cfor 7 sec.)on sperm survivability and conception rate in buffaloes with frozen semen of Murrah bulls was compared. Thawing at 60°C resulted in statistically significant increase (P0.05) in sperm survivability (motility, live spermatozoa and intact acrosomes) compared with thawing at 37°c. In all, 161 buffaloes were inseminated with frozen semen thawed at 37°Cand 159buffaloeswith semen thawed at 60°Cbetween 2006-07 and 2009-10. Conception rate of 64.15% and 50.31% was obtained with semen thawed at 60°C and 37°C, respectively, and the difference was significant (P0.05). Artificial insemination of buffaloes with frozen semen thawed at 60°C for 7 sec. could be safely used to improve both sperm survivability and conception rate in buffaloes.

In the study, 348 bacterial isolates comprising of Escherichia coli (100), Klebsiella aerogens (45), Proteus mirablis (35), Peudomonas aerogens (20), Staphylococcus sp. (78), Streptococcus sp. (13), Bacillus sp. (57) were isolated from egg shell and egg contents of 150 egg samples collected from local market in Patna (Bihar). The isolates were subjected to antibiogram. This study demonstrated that egg from organized farm microbial contamination than unorganized poultry farm reflecting the effect of environment, storage and transportation on microbial quality of eggs.

Mahapatra, C.M. | Beura, C.K. | Sahoo, S.K.
Effect of strain (Khaki Campbell, Indigenous) and age (224 and 280 days) of ducks on the physical egg quality and presence of off-flavour in eggs was studied. The average of egg weight, yolk index and percent yolk weight for the two ages under study were significantly (P0.05) higher in Indigenous duck eggs whereas the same average value for albumen index, Haugh Unit score and percent albumen were higher in Khaki Campbell eggs. However, shape index, yolk colour score, shell thickness and percent shell weight of eggs were comparable for the two strains. Age of ducks had an insignificant influence on shape index, albumen height, shell thickness and yolk index as evident from the least difference between average values of two strains under study. But, the average values of the two strains under study were significantly affected by age for A.I., H.U. score, % albumen weight, % shell weight and % yolk weight. Presence of off-flavour was more pronounced in Khaki Campbell eggs than that of indigenous eggs.

Scientific and production examination of feed additive Semerik-Vita containing iodine and selenium was realized in the conditions of the Republic of Belarus by studying of its influence on production and economic indexes of laying hens and their products, as well as by studying of its influence on clinical state and biochemical blood indexes of poultry. Research results showed that application of feed additive Semerik-Vita made it possible to increase of egg producing ability intensity on 1,8 %, egg yield - on 2,4 % in the conditions of lowering of feeding expenses on 1,4 %. Application of the analyzed feed additive made it possible to obtain a new kind of eggs fortified with iodine, selenium, beta-carotene and vitamins (A, E, C, PP, B1, B2, pantothenic acid and folic acid). In eggs of poultry of experimental group the content of selenium increased in 2,1 times, iodone - in 1,5 times, vitamin E – in 3,9 times, beta-carotene – in 1,4 times, vitamin A – in 1,3 times, pantothenic acid – in 1,2 times, vitamin C – in 1,17 times, vitamin PP – in 1,4 times, vitamin B1 – in 1,5 times, vitamin V2 – in 1,4 times, folic acid - in 1,5 times in comparison with eggs of laying hens from the control group. Research results proved that application of Semerik-Vita did not render negative effect on the clinical indexes of laying hens. It made it possible to lower the content of urea acid in 1,7 times, as well as to increase the content of triglycerides in 2 times, cholesterol - in 2,4 times, magnesium - in 1,28 times

Into the programme hen selection of Belarus Autoseksnyj cross there was introduced the indeks of the so-called quality of eggs which is defined by removal defective on quality of a shell of eggs in 30 and 52-week age. The size of variability of an indicator of 16,0-25,4% and hehtability 0,3-0,4 allows to lead selection on increase in an exit of qualitative eggs. Influence on quality of eggs with defects of a shell of age of hens, intensity eggs, weights of eggs, a linear accessory is established
