Technological and nutritional properties of ostrich, emu, and rhea meat quality

In recent years a growing demand for ratite meat, including ostrich, emu, and rhea has been observed all over the world. However, consumers as well as the meat industry still have limited and scattered knowledge about this type of meat, especially in the case of emu and rhea. Thus, the aim of the present review is to provide information on technological and nutritional properties of ostrich, emu, and rhea meat, including carcass composition and yields, physicochemical characteristics, and nutritive value. Carcass yields and composition among ratites are comparable, with the exception of higher content of fat in emu. Ostrich, emu, and rhea meat is darker than beef and ratite meat acidification is closer to beef than to poultry. Ratite meat can be recognised as a dietetic product mainly because of its low level of fat, high content of polyunsaturated fatty acids (PUFA), favourable n6/n3 ratio, and high iron content in comparison with beef and chicken meat. Ratite meat is also rich in selenium, copper, vitamin B, and biologically active peptides such as creatine (emu) and anserine (ostrich), and has low content of sodium (ostrich). The abundance of bioactive compounds e.g. PUFA, makes ratite meat highly susceptible to oxidation and requires research concerning elaboration of innovative, intelligent packaging system for protection of nutritional and technological properties of this meat.

Introduction: Livestock-associated methicillin-resistant Staphylococcus aureus (LA-MRSA) belonging to the clonal complex 398 (CC398) emerged recently in livestock as a new type of MRSA, which may cause zoonotic infections. This study presents data on the characterisation of S. aureus isolated from the meat processing plants. Material and Methods: S. aureus was isolated from 90 samples collected in the raw meat warehouse, from devices and surfaces of meat processing plants, and from finished meat products. The isolates were subjected to molecular analysis in order to investigate the presence of enterotoxin genes, the mecA gene, and to verify whether they belong to the clonal complex 398. The genetic relatedness of the isolates was determined using pulsed-field electrophoresis. Likewise, antimicrobial susceptibility was tested. Results: From 21 S. aureus strains isolated, five belonged to the CC398, two of which were recognised as MRSA and three as methicillin-sensitive Staphylococcus aureus (MSSA). The most prevalent enterotoxin genes were seg and sei. Two MRSA CC398 isolates, three MSSA CC398, and one MSSA were classified as multidrug-resistant. Conclusion: The first isolation of MSSA CC398 from beef in Poland indicates contamination of beef by strains belonging to this clonal complex. The occurrence of multidrug-resistant enterotoxigenic S. aureus isolates in the finished meat products constitutes a potential risk for the consumers.

Toxoplasma gondii is one of the most prevalent zoonotic protozoan parasites worldwide and affects the vast majority of warm-blooded animal species, including humans. Postnatal infection in humans occurs through the ingestion of sporulated T. gondii oocysts or via the oral intake of parasite tissue cysts during the consumption of raw or undercooked meat. In this regard, given their high exposure to oocysts, chickens (Gallus domesticus) raised on the ground constitute a potential source of T. gondii.

A total of one hundred meat products samples; 20 each of camel's minced meat, burger, rice kofta, frankfurter and luncheon were collected from different supermarkets at Cairo and Giza Cities. All samples were exposed to bacteriological examination and showed that the mean values of aerobic plate count, psychrophiles, coli forms, fecal coli forms, S. aureus, and B. cereus in examined camel's minced meat, burger and rice kofta were higher than luncheon and frankfurter. E. coli, Salmonellae, S. aureus and B. cereus, L. monocytogenes were isolated from examined camel's meat products by different percent. The public health significance of the isolated microorganisms as well as suggestions for improving the quality of the camel meat products were discussed.

Listeria monocytogenes is an important foodborne pathogen responsible for human listeriosis, which is a disease with high hospitalisation and mortality rates. The bacteria are usually susceptible to most antibacterial substances, but resistance to some of them has been recently observed. The present study introduces the evidence on the emergence of antibiotic resistance among L. monocytogenes strains isolated from food and food-production environments in Poland.

Objective: This study was conducted to investigate the lamb production potentiality in terms of nutrient intake and utilization, growth performances, carcass characteristics and meat quality of three regional native sheep under intensive management condition.Materials and methods: A total of 24 growing lambs having 08 lambs from each group with 4 to 6 months of age were used in this study. 40% urea molasses straw (UMS) and 60% concentrate mixture of the total diet were supplied according to lamb body weight. The total feed was offered at 4.0% live weight on dry matter basis of each animal. The completely randomized design was used in this experiment. Objective: Screening of antibiotic residues in broiler chicken meat and liver collected from farms and local markets in Bangladesh.Materials and methods: A total of 160 samples (breast, thigh muscle and liver) were collected from markets and farms from different region of Bangladesh. PBS buffer system with trichloracetic acid and diethyl ether based sample extraction was performed. For comparison the standard antibiotics; Ciprofloxacin (CIP), Enrofloxacin (ENR), Oxytetracycline (OTC), Amoxicillin (AMOX) and Doxycycline (DOX) were prepared by dissolving in methanol. Samples were pointed on TLC plates transferred to TLC tank containing acetone-methanol (1:1) as mobile phase. Retention factor (Rf) was calculated after observing the chromatograms on UV light at 256 nm. Same Rf value of standard and sample considered similar compound. Results: Liver sample were mostly positive for antibiotics residue followed by thigh muscles and breast muscle. The frequency of antibiotic residues was highest in liver followed by thigh muscles and breast muscle. Among the antibiotics CIP ranked top in all types of sample. In breast muscle highest antibiotic was CIP (39%) followed by DOX (26%), AMOX (24%), OTC (23%) and lowest was ENR (21%). In thigh muscle, 42, 29, 28, 27 and 24% sample was positive for CIP, OTC, DOX, AMOX and ENR, respectively. Highest number of liver samples were shown positive result for all screened antibiotics (CIP-52%, OTC-46%, DOX-43%, AMOX-42% and ENR-36%).Conclusion: This study ascertained those antibiotics residues are present in chicken muscle and liver which causes serious health hazards to consumers. So proper steps should be taken to control emergence of antibiotic resistance in human being as well as in the environment. [J Adv Vet Anim Res 2018; 5(2.000): 140-145]

Objective: This study investigated the prevalence of Listeria monocytogenes in retail poultry shops, characterized the antibiotic resistance profile, and detected the genotypic pattern of vir¬ulence genes. Materials and Methods: Broiler meat (n = 90), intestinal content (n = 40), and environmental samples (n = 95) were collected for this study. Besides, hand swabs (n = 20) were obtained from the poultry shop workers and stool samples (n = 40) were collected from the outpatient clinics of Beni-Suef University Hospital, Egypt. The samples were subjected to isolation and identification of L. monocytogenes by conventional bacteriological examinations and biochemical tests, followed by confirmatory identification by the polymerase chain reaction. Results: Among the collected samples (n = 285), L. monocytogenes could be detected in 14.4% (n = 41/285) of the samples, where 30.0% (n = 12/40) of the intestinal content was positive. Similarly, 10.0% (n = 9/90), 15.0% (n = 3/20), and 12.5% (n = 5/40) of the samples of meat, hand swabs, and stools were found positive for L. monocytogenes, respectively. A total of 12 (12.6%) out of 95 environmental samples were positive for L. monocytogenes. Based on the antimicrobial sensitiv¬ity profile, most of the recovered isolates were multidrug-resistant against most commonly used antibiotics. Conclusion: The findings conclude that poultry shops play a vital role in transmitting L. monocy¬togenes to the consumers. Asymptomatic poultry shop workers should draw attention to their potentials for spreading the infection to the consumers through the contaminated carcasses. Meat-based food such as meatball and sausages are important sources of protein needed for the human body. Due to different prices, some unethical producers try to adulterate high-price meat such as beef with lower priced meat like pork and rat meat to gain economical profits, therefore, reliable and fast analytical techniques should be developed, validated, and applied for meat traceability and authenticity. Some instrumental techniques have been applied for the detection of meat adulteration, mainly relied on DNA and protein using polymerase chain reaction and chromatographic methods, respectively. But, this method is time-consuming, needs a sophisticated instrument, involves complex sample preparation which make the method is not suitable for routine analysis. As a consequence, a simpler method based on spectroscopic principles should be continuously developed. Food samples are sometimes complex which resulted in complex chemical responses. Fortunately, a statistical method called with chemometrics could solve the problems related to complex chemical data. This mini-review highlights the application of Fourier-transform infrared spectroscopy coupled with numerous chemometrics techniques for authenticity and traceability of meat and meat-based products. Meat products are essential sources of high quality animal protein, essential amino acids, and trace elements such as copper, zinc, and iron, and vitamins such as vitamin B group. However, meat products can be exposed to contamination with several xenobiotics including heavy metals. Several species of the heavy metal group have no physiological functions and their intake via contaminated food and water is associated with several adverse health effects that might reach to even death. In this review, we will throw the light on the occurrence of heavy metals and the sources of contamination of the meat products with these chemicals. Moreover, the potential adverse health effects associated with these chemicals will be reviewed.
