Effect of freezing on moisture, protein, fat and ash contents of broiler meat

This trial was conducted to study effect of freezing on quality of broiler meat after freezing. Meat samples were taken from two sites such as breast and thigh. The weight, moisture, protein, fat and ash contents were analyzed before and after freezing at -25 degree centigrade for 15 days using methods given in AOAC, (1990). It was observed that protein, fat and ash contents were not changed consequent to freezing. There was loss (P less than 0.05) in weight which can be attributed to drip loss when meat is thawed. This study provided evidence that there is no change in nutrients when meat is subjected to freezing.

This study was attempted to verify the mechanisms of RBC survival time shortened with vitamin E deficient and decrement of phospholipid concentrations by administration of iron. The concentration of iron in basal ration (group A and group B) was 40 mg/kg of feed, and the final concentrations of iron in the Fe (OH)3 supplemented-rations (group C and group D) were 13,496 mg/kg and 26,973 mg/kg, respectively

In the conditions of the Republic of Belarus the was studied the age-specific dynamics of content of total lipids, triglycerides, total cholesterol, phospholipids, total iron and catalase activity in spleen of broiler chicken during the incubation period (1-46 days). The content of total lipids, total cholesterol, and phospholipids was at maximal level at one day-old age, and gradually lowered by the end of growing period. The amount of total iron in ontogeny increased till the 30 day-old age and a bit lowered by the end of growing period. In broilers with lower live weight the iron content in spleen was lower during the whole growing period. The catalase activity had a wave-like character and depended on prophylactic vaccinations undertaken and the amount of lipids in tissues.

In the conditions of the Republic of Belarus there was analyzed the productivity of 13-18-month old young stock of cattle which was bred for meat with various levels of energy value nutrition. Also, there were noted their slaughter qualities and chemical composition of meat. Administration of diet rations with an increased level of exchange energy and the best indices of protein fissility rendered a positive influence on productivity of young stock of fattening cattle and made it possible to obtain 1103-1100 gram of body weight gain. As a result, the energy value gain was 22,9-22,6 MJ along with conversion of metabolizable energy at a gain - 24,7-25,3%. Consumption of metabolizable energy per 1 MJ along with body weight gain were within 4,7-5,0 MJ. Feeding of rations with various levels of the studied factor rendered the positive influence on slaughter qualities, made it possible obtain slaughter yield of 53,6-54,6% at an optimum ratio of nutrients in meat. Feeding of bull calves with diets with excessive content (up to 10%) of metabolizable energy made it possible to lower the prime cost of obtained breeding products on 0,55%.

In process of animal husbandry intensification much attention should be given to maintenance of the high-grade balanced feed of animals. Forage supplement Profat (Protected Fat) is a protected fat in dry-sand mould with 84% of fat content. Application of 0,5-0,8 kg of dry fat supplement in cows diets per 1 head a day (4,7-10,0% in mixed forage content) promotes the increasing of prime cost of milk yield with basic fatness at 1,8-2,8% within fatness growth at 0,1-0,24% without protein content decrease. During the analysis of morphological and biochemical blood structure there was not established any considerable inter-group distinctions. At the same time, it is necessary to notice, that in blood of animals of two experimental groups there was stated a little bit higher protein content. However, in proportion to application of experimental fat additive up to 0,8 kg per head a day the protein content decreased. The increased number of erythrocytes and hemoglobin content in blood of animal of trial groups proved the strengthening of metabolic processes. In blood of trial groups it was noted high quantity of vitamin A and phosphorus as well as lower amount of calcium

Elaboration of production technology of rape (Brassica napus) phospholipids as one of components of feed additive was realized in the conditions of the Republic of Belarus. The following equipment was used for rapeseed processing: conveyer screw for seeds, conveyer for pressed seeds (seed cake), press Farraet Zralok LC preliminary, press - Farmet Zralok PL finishing, storage-capacity for oil, storage with mixing mechanism, automatic leaf filter, compressor, air vent, air filter. Rape oil was the main product of rape processing and oil seed press cake and rape phospholipides were the additional products. Quality indexes of rape phospholipids (appearance; quantity of obtained phospholipids; moisture content; dry matter content; oil and extractive matter content; total amount of carbohydrates) were analyzed. Results of phospholipids production depending on period of filtration and pressure load in the process of oil filtration were presented. Results of rape phospholipids production depending on air pressure were given. There were obtained the following optimal parameters for phospholipids production: optimal filtration time of freshly squeezed rape oil – 5-6 hours; optimal pressure load of during the filtration of raw rape oil - 2,5-3,0 atmospheres; and optimal air pressure during the filter drying - 2,5-3,0 atmospheres. The proposed production technology of rape phospholipids made it possible to produce 4,5-5,5% of phospholipids from 1 kg of rape
