Inhibition of microbial growth of a salad with meat in mayonnaise by different packaging technologies

The objective of the research was the shelf life extension of a salad with meat in mayonnaise. The microbial stability of the salad with meat in mayonnaise packaged under vacuum, in modified atmosphere, and using 'Sous vide' technology was examined and compared with conventionally packaged (in ambient air) salad. The salads were packaged in polyamide/polyethylene pouches with barrier properties as well as in pouches made from biodegradable plasticized poly-β-hydroxybutyrate or polylactic acid film. Control samples without preservatives were packed in traditional polypropylene containers covered with non-hermetic lids. PURASA L Powder Opti Form (sodium lactate) in the amount 5 g kgE-1, 10 g kgE-1, and 15 g kgE-1, and ethyl alcohol in the amount of 2 ml were used as single preservatives for separate samples. The studies of the samples were carried out after 1, 3, 7, 10, 15, 18, 25, 29, 42, and 52 storage days at the temperature of +4+-0.5 deg C. Experimentally the quality of the salad with meat in mayonnaise was characterized by measuring the total plate count of microorganisms. The obtained results indicate that different packaging technologies and addition of preservatives show significantly different influence on the microbial growth in different samples. 'Sous vide' packaging technology was effective for the shelf life extending and guarantee of safety of the salads with meat in mayonnaise.

Even though thousands of people suffer from hunger each day, there are people that simply throw away their food, imposing serious environmental, social and economic consequences. Food waste concept, however, is not as strictly defined as it varies from research to research. The classification itself can be specific to certain regions and cultures, and it can even be affected by the eating habits of the researchers. This review paper aims to unify the theoretical knowledge of food wasting with examples from actual research, evaluating data from the perspective of eating habits and finding motives for such an action, such as family and friends’ influence, incomes, lifestyle, religion, mass media etc. Previously done studies show that people are less concerned about reducing food wastage when it comes to environmental and social problems, but are the most motivated if they see a real opportunity to save money.

Venison is well known as a traditional meat type in Europe, and it is lower in calories, cholesterol and fat content than common cuts of beef, pork or lamb. The aim of the current research was to determine physico-chemical parameters such protein, fat, pH, moisture content as well microbiological quality of pickled venison during storage. Beef as a control was analyzed for comparison of obtained results. The meat (2×3×2 cm) pieces were pickled in vinegar marinade (composition: tomato sauce, mayonnaise, vinegar, lemon, onion, parsley, paprika, basil, black pepper, rosemary, salt) at 4±2 °C temperature for 48±1 h. The marinated meat was placed in polypropylene trays and hermetically sealed with high barrier polymer film under modified atmosphere (C02 40%+N2 60%) without and with iron-based oxygen scavenger sachets (Mitsubishi Gas Chemical Europe Ageless®). As a control, packaging in air ambiance packed pickled products was used. During storage time, the moisture and protein values significantly (p is less than 0.05) decreased and pH, fat content and colony forming units significantly (p is less than 0.05) increased in the pickled venison samples of all packages. Slower changes in pH of pickled venison and in the protein and moisture content of marinated beef were observed in modified atmosphere with oxygen scavenger during storage.

Sherbet with crunchy peanut chips could be classified as milk pomade. It is one of popular sweets in Latvia produced by Joint-stock Company Laima, which is one of the oldest producers of sweets in the Baltic States. Freshly made sherbet is soft and savoury but after several days’ storage at the open air gradually hardens, the product loses eye appeal, taste and becomes unmarketable. This problem limits the shelf life, so sherbet with crunchy peanut chips can be marketed only at the local market. The target of this study was to clarify the situation on the market in Latvia and to examine an issue of Latvian consumers’ awareness of milk pomade sweets – sherbet quality indicators, packaging and its presentation to consumers, as well as the sherbet market expandability. A questionnaire was developed – 800 respondents answered on the 14 questions – how well-recognized the milk pomade sweet – sherbet is, what the main features for this kind of sweets selection by consumers are, which quality indices are important for consumers. One of most important questions was to get know the consumers opinion about sweets, mainly sherbet possible packaging kind and the market turnover. Summarizing the questionnaire data, the response from consumers in Latvia was heartening – they like milk pomade candies. As a primary quality defect the hardness of sherbet was mentioned. Eliminating this main failing of quality, the demand of sherbet on the market could rise, as well the product marketing opportunities will grow.

Consumer decision making is one of the most relevant topics in marketing. Therefore, organizations endeavour to create products in a way that correspond to their customers’ needs and preferences. The emerging worldwide interest in healthy lifestyle and organic products could become the key success factor for food producing organizations. The article aims to determine the product attributes affecting consumer’s choice of a milk product in Lithuania. The method of Conjoint analysis was chosen for the research. The research was provided as a repetition of the same research, done in 2009. According to the principles of the Conjoint analysis, six attributes of milk were named: ‘Country of origin’, ‘Naturalness’, ‘Package size’, ‘Package type’, ‘Richness’, and ‘Price’. Each of the attributes was divided into several levels. While analyzing the structure of milk market in 2014, four market segments were distinguished: ‘Irrationally price concerned’, ‘Rationally price concerned’, ‘Ethnocentric ecologists’, and ‘Richness concerned’. Such segments like ‘Ethnocentric’, ‘Price-and-Richness concerned’ or ‘Ethnocentric price-concerned’ have disappeared from the market during the five-year period. According to research results, following suggestions were made for the companies dealing with the milk market in Lithuania: first of all, a company has to make a decision about the segment to work with; afterwards, based on the results of conjoint analysis (conditional utilities of attributes levels), optimal propositions for every particular segment have to be composed.

The American cranberry (Vaccinium macrocarpon Ait.) is a perspective and marketable crop both in Latvia and foreign markets, but berries are affected by rot in storage. The aim of the study was to detect the incidence level of cranberry fruit rot at the beginning of storage period in different places in Latvia. In 2007 - 2011, two hundred sound berries (out of 1000) were randomly collected by hand along a diagonal from five different cranberry plantations from locations all over Latvia. Berries were kept in plastic bags for a month and refrigerated at +7 °C. At the end of November, berries were sorted and rotten berries were separated from the sound ones. Over the period of 2007 - 2011, the incidence of storage rot reached 12 - 15% at the end of November, with an upwards trend observed every year, but the hot and rainy summer of 2010 significantly reduced the quality of fruit in storage, peaking on the average 33% of decayed berries. The incidence of fruit rot varied among the inspected cranberry plantations, but a tendency was observed that older plantations produced more rotting fruit and incidence of the disease was 12 - 50% after a month’s storage in the oldest plantation. The application of fungicides during the vegetation season did not affect development of post-harvest rot. Storage rot was a problem in the cranberry samples from all inspected plantations in Latvia, and in future the incidence of fruit rot is expected to increase.

Study has been performed in fish processing plant ‘X’ with an aim of on purpose to investigating the influence of salt treatment on yield and quality of frozen cod loins. Samples were soaked in 0.8, 1.2, 10% NaCl concentrations in brine before being frozen. In this study, the cod loin’s weight loss during refrigeration, defrosting and cooking was calculated and sensory analysis was carried out. It was found that the soaking in brines affected higher weight of cod loins after freezing. In the control group it decreased by 1.14%, but the S0.8, S1.2 and S10 groups had the weight gain, respectively 3.41, 4.72 and +4.78%. Although after the defrosting and cooking the control group had the lowest weight losses, considering the losses of all operations, it was found that the largest weight loss was in the control group and in the S0.8 group, respectively 31.19% and 31.29%, while the lowest in the S1.2 and S10 groups – 30.49 and 30.06% (p is less than 0.05), respectively. Salt treatment did not affect the taste and odour, but improved the cod loin’s texture properties. Based on these results, salt treatment is considered as an effective way to improve the yield and quality of frozen cod loins.

Perfect packaging exists in nature – examples include banana peel (Musa sapientum fixa cortices L.) and eggshell (Ovi testa L.), together with the many smart materials and systems that control plant and biological functions. Smart packaging is a type of packaging, which in addition to performing the four basic functions of packaging such as protection, communication, convenience and containment, also offers several additional functionalities depending on the type of product. Changes in consumer preference for safe food have led to innovation in packaging technology. The market for smart packaging systems has a promising future by integrating them into packaging materials. For food retailers, smart packaging is a huge development in helping to reduce food waste. The aim of this study was to assess the awareness and attitudes of food manufacturers and retailers to the introduction of smart packaging systems into the Latvian market. A survey reflected knowledge about active and intelligent packaging and its possible introduction into the Latvian market. Ten manufacturers and ten food retailers from different regions in Latvia answered 16 questions, including how well they were informed about smart packaging and how much consumers would be willing to pay for it. In addition, the food manufacturer and food retailer confidence in the impact of smart packaging on a product storage quality was analysed. The results revealed that manufacturers and retailers in Latvia have a poor understanding of the new opportunities which could be offered by using technologies of smart packaging.

The dynamic of rapeseed oil oxidizing processes under the influence of light in brown glass, colourless glass, and colourless PET bottles during storage at 18+-2 deg C were investigated. The changes in A and E vitamins content in rapeseed oil packed in colourless PET packaging materials were determined after 4 months storage at 18+-2 deg C at daylight. The connection between different packaging materials' transparency and oxidizing of oil were observed.

Sea buckthorn berries are one of the most important sources of vitamins, minerals, organic acids, polyphenols and other biologically active substances in human nutrition. The shelf life of fresh chilled berries does not exceed one week. The venues of research were Fruit and Berry Processing Centre of the Dobele Horticultural Plant Breeding Experimental Station and Packaging Material Testing Laboratory of the Faculty of Food Technology, Latvia University of Agriculture, from August until October 2005. Two most popular sea buckthorn cultivars in Latvia - 'Avgustinka' and 'Prozrachnaja' - were used for the study. Sea buckthorn samples were packed in ready-made PET/adhesive/PP containers supplied by 'Huhtamaki'. Gas mixture with initial composition of 10% of O2, 10% of CO2, 80% of N2 and ambient air as control were used. Containers were sealed on the packaging equipment 'TECNOVAC Pratica'. Packed sea buckthorn samples were stored at +4+-1 deg C temperature for 50 days. The aim of this study was to clarify the effect of the initial concentration of gas mixture in the package made from plastic of high barrier properties on the quality of fresh sea buckthorn berries during storage time. The results showed that shelf life of fresh sea buckthorn berries without any significant quality changes can be extended till 30 days by packaging in containers with high barrier properties and air ambiance.
