Determination of Phytochemicals and Antioxidant Capacity of Satureja hortensis L

Thyme is one of the spices that is widely consumed in the regions where it grows and is used in many dishes, especially soups, and gives a regional identity to the dish where it is used. In this study, the amount of phytochemicals and antioxidant capacity of the plant Satureja hortensis L. (süpürge kekiği, çibriska) which grows spontaneously and is used as a spice in meals in the Karakoçlar settlement area of Olur district of Erzurum province was investigated. The total amounts of phenolic and flavonoid substances were determined to be 40.85±0.85 mg GAE/g and 26.52±0.46 mg QE/g, respectively. In addition, the DPPH radical scavenging activity of the plant extract was calculated as 45.24 ±3.47 μg TE/mL and the IC50 value was calculated as 177.11±0.99 μg/mL. It was determined that the Cu2+ reducing antioxidant capacity of the S. hortensis plant extract was 2162.09±113.61 μg TE/mL and the Fe3+ reducing antioxidant capacity was 24.36±4.59 μg TE/mL. As a result, it was concluded that the S. hortensis plant, which is known with different names in different regions, has antioxidant potential and can be used as a natural antioxidant source in addition to its common use.

Bu çalışmada, biberiye ve kekik yağı ekstraktları kullanılarak elde edilen alabalık (Oncorhynchus mykiss) marinatlarının depolanması sırasında meydana gelen kimyasal değişimler araştırılmış ve kullanılan bitkisel yağ ekstraktlarının ürünün yağ asidi kompozisyonu üzerine etkisi belirlenmeye çalışılmıştır. Fileto haline getirilmiş balıklar üç farklı formülasyon kullanılarak (M grubu: %4 asetik asit-%10 NaCl, B grubu: %4 asetik asit-%10 NaCl-%0,1 biberiye yağı ekstraktı, K grubu: %4 asetik asit-%10 NaCl- %0,1 kekik yağı ekstraktı) marine edilmiş, olgunlaşma aşamasından sonra vakum paketlenerek +4°C’ deki buzdolabı koşullarında depolanmışlardır. Numunelerin 0. gün, 1., 2., 3., 4. ve 5. ayın sonunda kimyasal analizleri (pH, TBA, Peroksit Sayısı, TVB-N, Serbest yağ asitleri, yağ asitleri kompozisyonu) yapılmıştır. Deneysel örnekler TVB-N açısından değerlendirildiğinde depolamanın 3. ayında K grubu örneklerinde 14,12 mg/100 g, B grubu örneklerinde 19,2 mg/100 g ve M grubu örneklerinde ise 28,9 mg/100 g olarak tespit edilmiştir. M grubu örnekleri TBA sayısı bakımından değerlendirildiğinde muhafazanın 3. ayında 5,84 mg MDA/ kg olup, diğer gruplar ile istatistiki fark önemli bulunmuştur. Kontrol grubu (M grubu) örneklerinin 4 ve 5. aylarda duyusal olarak bozulduğu için analizleri yapılamamıştır. Kontrol grubu ve K grubu örneklerinde marinasyon işlemi sonrasında, muhafaza periyodu boyunca EPA ve DHA değerlerinde düşüş şekillenmiş olup, istatistikî açıdan fark önemli bulunmuştur. Biberiye ilave edilen gruba ait örneklerin yağ asidi değerleri incelendiğinde, kaproik, miristik ve palmitik asit miktarları marinasyon işleminden sonra artmıştır ve fark istatistiki açıdan önemli bulunmuştur.

This study aimed to determine the antioxidant activity and chemical composition of essential oils obtained from thyme and rosemary. In our study, the yield for thyme essential oil was determined as 1.34% and the yield for rosemary essential oil was determined as 0.40%. It has been determined that there are components such as carvacrol, gamma-terpinen, thymol, terpineol, alpha-pinene, borneol, linalol in thyme essential oil. The most important components of rosemary essential oil are components such as eucalyptol, camphor, carvacrol, endo-borneol, delta-3-karen, terpineol, bornyl-acetate, o-simene. In addition, the total phenol content, antioxidant activity (DPPH) and p-anisidine values of essential oils were determined. Total phenol contents and DPPH IC50 values were found to be 18.72±0.37 mg GAE/g DW and 4.74 µg extract/mL for thyme, whereas 12.11±0.29 mg GAE/g DW and 2.75 µg extract/mL for rosemary. Our study also showed good antioxidant activity of thyme and rosemary essential oils. As a result, these properties show that thyme and rosemary essential oils have a very strong potential applicability as antioxidant agents for the food and pharmaceutical industries.

Oregano, which grows widely in the temperate regions of Europe, Asia and North Africa, has been known as a medicinal plant since ancient times. Thyme used in the spice industry and in the pharmaceutical industry due to its anti-fungal and antiseptic properties because it has an aromatic smell, also contains some vitamins and minerals that humans and animals need. The use of oregano, which comes to the forefront in the feeding of small ruminants during the times when animal feeds are scarce in our country, is becoming more and more important in small head and poultry production and good agriculture and organic farming applications due to some secondary metabolites it contains.

In this study, the effects of some herbal wastes such as daphne (Laurus nobilis), thyme (Origanum onites) and cumin (Cuminum cyminum) on the yield of Pleurotus ostreatus were investigated. While compost formula consisted 43% wheat straw+ 43% poplar dust+ 10% wheat bran+ 4% gyps mixture was used as the control group, 20% to 40% of herbal waste was added to this formula in the experiment groups. Total number of mushroom was counted in both the experiment and the control groups. Then, the harvested mushrooms were weighed and morphological features of caps were measured and recorded. As a result of obtained data, while it was detected that compost contained 20% cumin waste had the highest number of primordium (34), the control group had the lowest number of primordium (21 items). The highest biological yield was detected as 35.8% in the group contained 20% cumin waste. The lowest biological yield was detected in the control group with 24.6%.
