Probiyotik gıdalar, sindirim sisteminin çalışmasına yardımcı olan canlı mikroorganizmaları içeren gıdalardır. Bu gıdaların tüketimi sağlığın korunmasına ve bağışıklık sisteminin güçlenmesine olumlu katkı sağlamaktadır. Yapılan bu çalışma, probiyotik ürünlerin tüketim durumu ile tüketicilerin probiyotik ürünler hakkındaki bilgi düzeyini saptamak amacıyla yapılmıştır. Araştırma sonucunda ankete katılan bireylerin %51,7’si bayanlardan, %48,3’ü erkeklerden oluşurken yaşları 18 ile 65 arasında tespit edilmiştir. Probiyotik ürünler hakkında bilgiye erkekler %31,4 oranında sahip iken bayanlar %61,1 oranında sahip olduğu tespit edilmiştir. Ayrıca öğrenim seviyelerinin ve ekonomik durumların artışına bağlı olarak probiyotik ürünler hakkında bilgi seviyesinin anlamlı derecede arttığı görülmüştür. Probiyotik ürünleri tüketenlerin oranı %26,0 iken tüketenlerden fayda gördüğünü düşünen bireyler %79,1 olarak belirlenmiştir. Ek olarak probiyotik ürünleri tüketenlerin %77,3’ü bu ürünlerin doğal olduğunu düşünmektedir. Sonuç olarak probiyotik ürünlerin sağlığımıza olumlu katkısı olmasına rağmen tüketimi ve hakkındaki bilgi yeterli seviyede değildir. Kişilerin öğrenim seviyesi ve ekonomik refahı yükseldikçe probiyotik ürün tüketimi ve bilgi düzeyi artmaktadır. Bu nedenle buna benzer toplumun bilgisini ölçmeye dönük çalışmaların periyodik olarak yapılması önerilmektedir.

According to the report of World Health Organization / Food and Drug Administration, probiotics are expressed as, ‘‘live microorganisms that have a positive effect on the health of the host when consumed in sufficient quantities’’. People use probiotics to treat diseases and to promote general health. Probiotic bacteria should adhere to the tooth surface to prevent and slow down the tooth decay and also should join to the microbial dental plaque bacteria. However, probiotic bacteria should damage and compete with the cariogenic bacteria and prevent the growth of bacteria. In addition, probiotic bacteria should be able to reduce the acid production by affecting the carbohydrate metabolism. Probiotic is a new and interesting research topic in oral microbiology and oral diseases. A wide range of epidemiological investigations will demonstrate the different benefits of probiotics on human health.

Bu çalışmada, Mersin körfezinde avlanan mavi yengecin (Callinectes sapidus Rathbun, 1896) mikrobiyolojik kalite bakımdan incelenmesi amaçlanmıştır. Örnekler, Mersin Merkez (1. İstasyon), Erdemli (2. İstasyon) ve Silifke (3. İstasyon) ilçelerinde avlanan balıkçılardan temin edilmiş ve Mersin Gıda Kontrol Laboratuvar Müdürlüğü’nde analize alınmıştır. Çalışmada 180 adet örnek kullanılmış olup, analizler Ocak - Aralık 2014 tarihleri arasında aylık periyotlar şeklinde yapılmıştır. Araştırmada Salmonella spp., Koagulaz pozitif Staphylococcus aureus, Escherichia coli, Listeria monocytogenes, Vibrio choleraee, Vibrio parahaemolyticus, ve koliform grubu bakteriler araştırılmıştır. Çalışmada elde edilen sonuçlar göre; Salmonella spp., Listeria monocytogenes, Vibrio parahaemolyticus ve Vibrio cholerae her üç istasyonda da yıl boyunca tespit edilmemiştir. Koagulaz pozitif Staphylococcus aureus, Escherichia coli ve koliform grubu bakteriler ise üç çalışma istasyonunda tespit edilmiş ve sıcaklığa bağlı olarak artış gösterdikleri saptanmıştır. Sonuç olarak; çevresel kökenli faktörlerin taze yakalanmış yengeçlerin bakteriyel florası üzerinde etkisinin olduğu sonucuna varılmıştır.

Bu çalışmada; Osmaniye’de demir, çelik ve metal sanayi işletmelerinin üç ayrı bölgesinden mesafeye bağlı olarak örneklenmiş toprakları ile bu işletmelerden uzakta bulunan Osmaniye Korkut Ata Üniversitesi kampüs topraklarının bazı iz element [Cu, Mn, Fe ve Zn (mg/kg)] içerikleri ve karbon mineralizasyonu (28°C, 45 gün) karşılaştırmalı olarak incelenmiştir. Karbon mineralizasyonu için CO2 respirasyon yöntemi kullanılmıştır. Tüm topraklarda iz element içeriklerinin sınır değerlerden düşük olduğu belirlenmiştir. Sanayi Tesisleri yakınından örneklenmiş 1 nolu toprağın karbon mineralizasyonu [15,0 mg/C (CO2)/100 g KT] 4 nolu kampüs toprağından [30,0 mg/C(CO2)/100 g KT)] anlamlı düzeyde düşük bulunmuştur. Benzer durum dört toprağın karbon mineralizasyon oranları arasında da gözlenmiş olup Sanayi Bölgesi’nin üç toprağın da yine kampüs toprağından anlamlı düzeyde düşük bulunmuştur. Tüm bu bulgular toprakların karbon mineralizasyonu ve iz elementi içeriklerinin Sanayi Bölgesi’nden uzaklaştıkça değişmediğini; toprakların organik karbon ve azot içerikleri ile pH’larına bağlı olarak değişebileceğini ortaya koymaktadır.

Upper layer of the soil is exposed to mixture of stems, fruiting bodies and leaves of trees. Seven trees growing at same area were chosen. Their upper layers of the soil were collected from depth 5-10 cm as samples in spring and autumn. Their microbial populations were investigated in order to determine in terms of climate changes. In order to determine the number of the total microorganisms, gram-negative bacteria and spore-forming bacteria (cfu/g) were used by the serial dilution techniques. As a result, the highest numbers of microorganisms from the soil of the apple tree were determined as the total microbial count in the autumn, although the lowest number of microorganisms was obtained from the soil of the pine tree. However, the number of the gram-negative bacteria was the highest in the soil of linden tree, although the number of gram negative bacteria was the lowest in the soil of apricot, mulberry and apple trees. For spore - forming bacterium, the highest number from the mulberry soil and the lowest number from the linden tree have been obtained. In the spring, the highest numbers of microorganisms from the soil of the apple tree were obtained as the total microbial count, although the lowest number of microorganisms was obtained from the soil of the apricot tree. For the number of the gram-negative bacteria was the highest in the soil of walnut tree, although the number of gram negative bacteria was the lowest in the soil of apricot trees. However spore - forming bacterium, the highest number from the soil of the poplar tree and the lowest number from the mulberry tree have been obtained. In general, the rich diversity of the microbial population was shown morphologically in autumn.

Mastitis is an important disease which causes economic losses in the water buffalo breeding. According to severity, duration and primary, mastitis is generally classified as clinical and subclinical. Because of contamination from other animals in the herd, subclinical mastitis is a important dairy herd problem. However, clinical mastitis is a clinical case created by deformation of udder gland and decreasing milk yield. Staphylococcus aureus, Escherichia coli, Streptococcus agalactia and Streptococcus dysgalactia are in clinical mastitis, but Escherichia coli, Staphylococcus aureus, Pseudomonas, Streptococcus agalactia and Streptococcus dysgalactia are the most common isolated microorganisms in subclinical mastitis. Due to mastitis caused by these microorganisms in Water Buffalo, abnormality in the structure of milk are observed, and it causes economic losses to farmers from reduced production. Therefore, the detection of effective factors on mastitis and taking of the necessary precautions are very important. In this review, mastitis case in water Buffalo and its effects were discussed.
