Geleneksel Kuru Kaymakların Bazı Kimyasal, Tekstürel, Mikrobiyolojik ve Duyusal Özellikleri

Kuru kaymak, geleneksel kaymağın tandırda ve/veya gölgede kurutulması ile üretilen bir süt ürünüdür. Bu çalışmada, Erzurum ve Nevşehir piyasalarından toplanan Kuru kaymak örneklerinde (10 adet) bazı fiziksel, kimyasal, tekstürel, mikrobiyolojik ve duyusal özelliklerin belirlenmesi amaçlanmıştır. Ayrıca örneklerin görüntüleri, OpenCV (Open Source Computer Vision Library) görüntü işleme kütüphanesi ve C++ dili kullanılarak analiz edilmiştir. Kuru kaymak örneklerinde laktik asit (%) değerinin %0,46-1,21 aralığında ve pH değerinin 6,19-6,83 aralığında değiştiği saptanmıştır. Örneklerin ortalama kurumadde, yağ ve kül içerikleri sırasıyla %71,44, %42,25 ve %2,70 olarak tespit edilmiştir. Yapılan renk ölçümleri ile ortalama L* değerinin 77,42, a* değerinin 2,13 ve b* değerinin 17,44 olduğu belirlenmiştir. Kuru kaymak örneklerinin ortalama sertlik değerinin 1761,37 N, esneklik değerinin 4,30, iç yapışkanlık değerinin 0,64, sakızımsılık değerinin 689,41 N, çiğnenebilirlik değerinin 1212,00 N ve elastikiyet değerinin 0,60 olduğu tespit edilmiştir. Görüntü işleme analizi sonucuna göre örneklerin gözeneklilik durumu %12,27-29,84 aralığında değişmektedir. Mikrobiyolojik değerlendirme sonucunda örneklerde ortalama 3,94 log kob/g maya-küf ve 3,97 log kob/g koliform grubu bakterilerin bulunduğu belirlenmiştir. Ayrıca 4 örnekte Escherichia coli tespit edilmiştir. Görünüş, yapı ve koku parametreleri örneklerde sırasıyla ortalama 5,77, 5,75 ve 5,49 olarak tespit edilmiştir. Bu çalışmada, birbirinden farklı özelliklerde Kuru kaymak örneklerinin olduğu anlaşılmaktadır. Unutulmak üzere olan bu geleneksel süt ürününün özelliklerinin optimize edilmesi, standart ve hijyenik koşullarda üretilmesinin gerekli olduğu düşünülmektedir.

Tarım sahalarının çevresinde, sulama amaçlı yapılan göllerin rezervuar alanlarında biriken ağır metallerin kökeninin belirlenmesi ve toksik etkisinin anlaşılmasında, veri analizinin yapılması önemlidir. Çalışmanın amacı, Akkaya Gölü rezervuar sahasındaki toprakların kimyasal içeriklerinde çok değişkenli istatistik analizler kullanılarak Akkaya Gölü rezervuar sahasında tespit edilen ağır metallerin kendi arasındaki davranışlarını bunlar arasındaki ilişkilerinin belirlenmesi ve bu metallerin olası kökeninin açıklanması şeklindedir. Kimyasal analiz içeriklerinin bollukları Mg > Al > Fe > S > Ti > Zn > V > As > Cu > Ni > Pb > Co > Mo > Sn > Cd > Hg olarak sıralanmıştır. Fe ile Mg, Si, K, Co, V, Cu, As, Ni, Zn ve Pb arasında yüksek pozitif korelasyon bulunur. Faktör analizine göre toplam varyans 72.080 (% kümülatif) olup, 3 (üç) faktöre ayrılmıştır. Hiyerarşik kümeleme analizine göre 3 grup ve elementlerin kümeleme analizine göre 4 grup oluşmuştur. Bu grupların kendi aralarında benzer özellik sundukları anlaşılmıştır. Çok değişkenli istatistik analizleri bu çalışma için başarılı olmuştur.

Spiders are one of the groups that best adapted to terrestrial life among in invertebrates and are represented by approximately 48,000 species in the world. Although all spiders do not weave webs, the webs of spiders are literally a work of art. The main reason for spider web weaving is hunting. Some spider species live in the nature dependent on the own web, while others continue to live without being dependent on the own web. Although basic taxonomic features generally remain unchanged, some spider-silk weaving apparatus may undergo adaptive variations. In this study, the web structure of the weaving web spider, Argiope bruennichi (Scopoli, 1772) and the structural organization of the web weaving apparatus was observed by using scanning electron microscopy (SEM). The web structure of A. bruennichi, spinnerets especially posterior spinneret and arrangement of its spigots are shown and discussed in the light of the literature.

Marketplace waste collection is one of the crucial services provided by the district municipalities in Turkey. A significant amount of food waste is periodically collected from marketplaces. However, an important opportunity for recycling and mitigation climate change is missed because these waste are sent to landfills. Composting, one of the waste management technologies applied to organic waste to reduce greenhouse gas emissions and produce compost, is often preferred for the management of marketplace waste. This study aims to determine suitable locations for compost facilities to manage marketplace waste with the help of GIS considering economic, environmental, and topographic factors in Izmir, Turkey. There are 199 marketplaces in Izmir and each has at least one market a week. Each marketplace was weighted by means of population served by using location-allocation analysis since the amount of waste collected from the marketplaces is not known. First, an exclusion analysis was performed to remove limited use areas. Then, a preference analysis was performed. Factors affecting plant site selection process for composting marketplace waste, including marketplace locations and weights, were determined. Since all factors do not have equal importance, the analytical hierarchy process was used to determine weights for each factor based on their influence. The study area was spatially evaluated for each preference factor and a suitability map was created for each factor. Finally, a high-resolution final suitability map was obtained by combining each factor’s suitability map along with their weights. Areas with a suitability index greater than 80% have been defined as suitable areas for compost facility installation. The results indicate that there are 323 potential locations suitable for compost facilities in Izmir.

A research was carried out to assess the suitability of surface water for irrigation purposes. For this reason, 56 samples of surface water were collected from each union of Dinajpur sadar upazilla, Dinajpur. The analysis was included pH, EC, TDS, Ca, Mg, S, P, Na, K, Cl- and HCO3- to evaluate the suitability of surface water for irrigation purposes. Almost all the water samples were within the recommended pH value for irrigation and a great impact on crop production. With respect to electrical conductivity (EC) samples were low to medium salinity. For total dissolved solids (TDS), all samples were considered as freshwater for irrigation. On the basis of Ca, Mg, S, P, Na, K, Cl- and HCO3- all samples could safely be used for irrigation and would not affect the soils.

Talinum triangulare is an herbaceous succulent plant eaten as a vegetable throughout the tropics including many countries in West and Central Africa and are an essential ingredient in traditional dishes. Experiments were made on the plant to examine the influence of foraging behavior of flowering insect on pollination and yields of this plant species in 2018 and 2019 at Bafut. Observations were made on 1615 to 4055 flowers per treatment. The treatments included unlimited floral access by visitors and bagged flowers to deny all visits. The study focused on the foraging behavior of flowering insects and their pollination activity (fruiting rate). The results show that 14 insect species visited waterleaf flowers and Camponotus flavomarginatus was the most frequent (33.20%). Insects foraged throughout the day light period. Their activity was highest between 10 am and 12 pm. Insect species foraged the flowers for pollen and nectar. The fructification rate of unrestricted floral access was significantly high than that of protected flowers to deny all visits. The maintenance of insect nest close to T. triangulare field is recommended to improve it fruits production.

Picralima nitida (Stapf) T.Durand & H.Durand and Holarrhena floribunda (G.Don) T.Durand & Schinz are West and Central African plant species belonging to the Apocynaceae family. These two plants are used in traditional Ivorian medicine to treat hypertension, urinary tract infections, diarrhea, gonorrhea, malaria and diabetes. Phytochemical screening and evaluation of antioxidant activity of P. nitida fruit and H. floribunda leaf extracts of each of these two species have already been performed. In the present study, a comparative evaluation of the antioxidant activity of fruit (P. nitida) and leaf (H. floribunda) decoctions was carried out. The decoctions of P. nitida fruits and H. floribunda leaves were rich in secondary metabolites, especially polyphenols which have good antioxidant activity. Quantification of total phenols and flavonoids gave respective values of QP = 15235.632 ± 622 µg GAE / g dry matter and FP = 2.387 ± 0.387% for P. nitida and QH = 68597.701 ± 3171 µg GAE / g dry matter and FH = 17.581 ± 0.379% for H. floribunda. P. nitida showed antioxidant activity against DPPH radical (IC50 = 104.30 ± 3.17 μg / mL) and ferric ion Fe3 + (261.4 ± 36. 87 μmoL Eq Trolox / g extract). H. floribunda showed antioxidant activity against DPPH radical (IC50 = 41.73 ± 0.29 μg / mL) and ferric ion Fe3 + (365 ± 20.36 μmol Eq Trolox / g ExS).

In this study, it was investigated the effect of clove oil supplementation at increasing levels into laying hens’ diets on performance, egg quality traits, some blood parameters and yolk TBARS (Thiobarbituric Acid Reagent) values. For this purpose 96 Lohman white laying hens, 28 weeks of age, were divided into four treatment groups. Control group was fed with basal diet (C) and treatment groups were fed with diets formed by addition of clove oil at 50 ppm (CO1), 100 ppm (CO2) and 150 ppm (CO3), respectively. During the trial, feed and water were given as ad-libitum, and poultry house was illuminated for 17 hours. Experiment lasted for 13 weeks. Addition clove oil at increasing rates into diet did not affect the live weight. The data analysed as polynomial showed that supplementation of clove oil into layer diet linearly improved feed conversion ratio and increased the egg production. But, daily feed consumption, egg weight, damaged egg ratio and egg quality parameters were not affected by treatments. Serum parameters such as triglyceride, glucose, aspartate aminotransferase, alanine aminotransferase and calcium were not affected by the clove oil supplementation. TBARS values in C, CO1, and CO2 were found higher than the CO3 group fed with diet including 150 ppm clove oil. In conclusion, clove oil at 150 ppm level in diets of laying hens could be used due to extend the egg shelf life and to decline serum cholesterol content.

Growth factors and vitamin-like substances have great positive importance in most biological interactions in the cellular level. The addition of these elements in the culture media will increase the yield of the resulting embryos and improve quality. We examined the effects of epidermal growth factor (EGF) and myo-inositol (MI) on meiotic maturation and yields of blastocyst of Awassi sheep oocyte across two experiments. The oocytes obtained were subjected into three treatments: A (without EGF nor MI), B (10 ng/ml EGF + 20 mmol/l MI) and C (50 ng/ml EGF +40 mmol/l MI). Oocytes were then cultured in Ham's F-10 medium supplemented with 5% (v: v) fetal calf serum and 40 ng/ml follicle - stimulating hormone. In the first experiment, during the 27-h culture period, the oocytes were assessed for germinal vesicle break down, metaphase-I and metaphase-II stages across three-time intervals (9, 21 and 27-h). Results of the experiment showed that EGF and MI enhanced the rates of germinal vesicle break down phase (1.53%; 27-h interval; lowest value), metaphase-I (33.87%; 21-h interval) and metaphase-II (89.23%; 27-h interval). In the second experiment, the oocytes incubated in treatment B achieved the highest rates of cleavage (81.96%), 2-8 cell (62.35%) and blastocyst (45.09%). It is concluded from the present study that incubating sheep oocytes in culture media containing a cocktail of EGF (10 ng/ml) and MI (20 mmol/l) significantly improves the rates of metaphase-II, fertilization and blastocyst rates.
