The Making of Salty Soy Sauce From Koro Benguk (Mucuna Pruriens) (Study of Saline Concentration of Salt Solution and Duration of Moromi's Fermentation) Texte intégral

The objectives of this study were to determine the saline concentration and moromi’s fermentation duration of Koro Benguk salty soy sauce at best organolepticly and determine consumers’ preferences towards Koro Benguk salty soy sauce from the best treatment results. The study was conducted using a randomized design method using two factors: the saline concentration (17%; 20%; and 23%) and duration of moromi’s fermentation (2; 3; and 4 weeks). The best treatment results based on the Friedman test was on the saline concentration of 17% and moromi’s fermentation duration was 4 weeks, with the NP value of 1,000; had a preference color level of 5:40 (liked); aroma of 4.30 (rather liked); flavor of 4.55 (rather liked); and viscosity of 5.05 (liked). The obtained protein was 7.14%; and dissolved solids of 27obrix. Consumers’ preferences towards the best treatment showed that product of Koro Benguk salty soy sauce was acceptable to consumers.

Response of sunflower germplasms viz. cultivated sunflower H. annuus and two breeding lines H. annuus x T. rotundifolia and H. annuus x V. encelioides developed after wide hybridization were used for identification of drought tolerant sunflower genotypes at the seedling growth stage. Three water stress levels of zero (control), -0.4, and -0.8 MPa were developed using polyethyleneglycol-6000 (PEG-6000). Physiological and biochemical stress determining parameters such as root and shoots length, fresh weight, antioxidant enzyme activities (superoxide dismutase (SOD), catalase (CAT), guaiacol peroxidase (GPO), ascorbate peroxidase (APX) and antioxidant metabolite content (total antioxidant capacity, total phenols and total flavonoids content) were compared between seedlings of all three genotypes. Results revealed that sunflower genotypes have similar responses at two osmotic potentials for shoot and root length and fresh weight. The data also showed that drought stresss could induce oxidative stress, as indicated by the increase level of ascorbate peroxidase and guaiacol peroxidase at -04 MPa in H. annuus cv 1114. Although the activity of ascorbate peroxidase and guaiacol peroxidase was differentially influenced by drought, the changes of antioxidant enzyme activities such as catalase, superoxide dismutase, guaiacol peroxidase, and ascorbate peroxidase subjected to drought stress follow a similar pattern in both breeding lines, indicating that similar defense systems might be involved in the oxidative stress injury in sunflowers. Increase in content of phenols and flavonoids were detected for all three genotypes under stress, which showed that these were major antioxidant metabolites in scavenging cellular H2O2.

The study presents first report of Agrobacterium mediated genetic transformation in Rice paddy herb (Linmophila aromatica). A. tumefaciens strain C58C1 harboring pBin19 Plasmid containing β-glucuronidase (GUS) and neomycin phosphotransferase II (nptII) gene, under the control of 35S promoter and NOS terminator was used. Shoot tip explants were inoculated for 30 min followed by co-cultivation for 72 h and selected on agar semi solidified MS medium containing 100 mg/l Kanamycin and 1.0 mg/l BA; whereas total number of 78 putative transgenic shoots were obtained. The shoots were rooted on MS medium containing 1.0 mg/l IBA and 100 mg/l Kanamycin where 43 plants survived and rooted. Expression of GUS gene in the putative transgenics was confirmed by histochemical GUS assay. Visible localised gus expression was noted in a few cells and callus tissues of 4 plantlets that were photographed using compound light microscope.

Eighteen (18) lactating she-camels and two mature male for mating were used to determine the effect of Management System on camel calving interval, The camels were maintained under semi-intensive (N = 9) and Traditional management system (N = 9) in North Kordofan State, western Sudan. The experimental females in each group kept together with the bull during 18 months. Blood samples were collected from jugular vein since 4-months post-partum and continue 14 successive months at monthly interval. The serum samples were separated and stored at -20°C and were analysed for progesterone concentration using progesterone specific radio immuno assay (RIA) kits. The results indicated that under semi-intensive system 77.8% of females had been pregnant in 5th - 8th month post-partum and the calving interval varying between 17 to 20 months. Under traditional system and during the experimental period 44.5% of females were pregnant in the 11th – 16th month and the calving interval varying between 23 to 28 months. The ratios of pregnant vs non-pregnant during experimental period in semi-intensive and traditional were 88.9% vs 11.1% and 44.5% vs 55.5%, respectively. Beside the behavioural signs progesterone level consider a good indicator for pregnancy in camels. In pregnant females Progesterone concentration increased significantly during early months. The range of Progesterone concentration varied between 1.10 – 5.76 ng/ml and 0.67 – 2.53 ng/ml in semi-intensive and traditional system, respectively. Our results allow quantifying this impact. With a supplemented diet including 2 Kg of concentrates and 5 kg of roughages per day, the fertility rate will be improved of 67%. It would be possible to expect more than two fold young camels in a year by supplemented 5 kg of concentrates. We conclude that under semi-intensive management dietary supplement during post-partum and early lactation period improves reproductive parameters for instance shortened calving interval.

Path analysis is determinate that relationships among variables by using correlation coefficient, partial correlation coefficient and path coefficient. In this study, direct and indirect effects of honey yield between brood rearing area, flight activity, pollen collection, nectar collection and cleaning power were examined with these coefficients. Data which taken from C.U. Faculty of Agriculture, Department of Animal Science, Beekeeping Business were used. In the end of this research, the effect of brood rearing area on honey yield was found significant. In the colonies, brood rearing area has the highest direct effect of honey yield. Nectar collection has the highest indirect effect.

In this study it was aimed to determine the microbial diversity and level of antibiotic resistance patterns of Gram-negative bacterial isolates from the hospital sewages. The 219 Gram-negative bacterial isolates to 16 different antibiotics (belonging 10 classes), was investigated by agar diffusion method. A total of 18 species of bacteria were isolated: the most common strains isolated from all samples were Klebsiella oxytoca (27.4%), Klebsiella pneumoniae (20.5%) and Escherichia coli (20.1%). There was a high incidence of resistance to ampicillin (98.6%), streptomycin (95.9%) and erythromycin (90.0%), and a low incidence of resistance to cefepim (13.2%), imipenem (5.0%) and meropenem (3.2%). 35.6% of all bacteria isolated from hospital sewage were resistant to 9 different antibiotics. The multiple antibiotic resistances (MAR) index ranged from 0.25 to 0.94. Results show that hospital sewages have a significant proportion of antibiotic resistant Gram-negative bacteria, and these bacteria constitute a potential risk for public health.

Nigeria as nation has over the years engaged in lots of developmental activities without actions which makes achievements to elude the people. Development of societies doesn’t happen in the vacuum. Thus, the adoption of Structural Adjustment Program, SAP, by Nigeria leading to the neglect of the custom periodic National Plan at a time when Nigeria had no structure for development was the beginning of journey to widened inequality and large poverty incidence, depth and severity. To close the gap between the rich and the poor, the Nigeria government had designed and implemented some programs and policies whose implementation has not solved the inherent problems. In year 2000, the world leaders subscribed to the Millennium Development Goals to ensure synergized global approach to solving the poverty menace. Programs designed in Nigeria to achieve the MDGs focused on the urban centers thereby relegating the rural areas which are responsible for the feeding of the teeming population of the urban dwellers. Farming households and the general rural communities do not have access to clean water, quality education and health facilities, good feeder roads, affordable and safe energy as well as other socioeconomic and socio-infrastructural facilities that would ensure sustainable living for the people whose contribution to the national economy cannot be overemphasized. This study therefore looks at the structural actions the Nigeria government should embarked upon to ensure that the rural dweller have access to life. As the government would be developing programs and policies to achieve the Sustainable Development Goals whose priority is the end poverty in all forms and everywhere by 2030, this study reveals how to position the rural economy for developmental attention from the policy makers.

In recent years, studies have been focus not only on the nutritional properties of Vernonia amygdalina, but its pharmacological, medicinal and antioxidant values. The antioxidant, antidiabetic, hepatoprotective, haematological, antiplasmodial, antimicrobial, anticancer, anti-inflammatory, pharmacological and medicinal value of Vernonia amygdalina is no longer in doubt and is comprehensively documented in this study. Some studies attribute its medicinal properties to its phytochemical compounds while other studies link its health benefits to its bioactive components. It is expected that this review will be useful to researchers, agriculturists and herbal medical practitioners and improve interest in the study and utilization of this plant in other part of the globe where it is not presently cultivated or utilize. Relevant information was obtained from online resources such as Google Search, Google Scholar, PubMed and Medline. Only literature highlighting the nutritional, medicinal, pharmacological, and antioxidant activities of the plant were selected for this review.

Copra meal (CM) is an important feed ingredient and the by-product of the oil extraction from dried coconut kernels. This product, although copra meal has a moderate protein content (15-25%); because of a high cellulose content (11.63-16.00%) and some limiting amino acids (particularly lysine and methionine), limits its use as a basic source of protein in poultry due to insufficient. Copra meals are more suitable common supplements as both an energy and protein source for ruminants. In this paper, nutritional researches performed with the copra meal usage on poultry and ruminant species have been reviewed.

Non-dairy probiotic functional foods are receiving considerable interest recently owing to the inability to cause allergy in certain segments of the population. Studies on probiotication were carried out to determine the suitability of kunun-zaki as food matrix for production of probiotic beverage using single and mixed culture of Pediococcus acidilactici KU7, Pediococcus pentosaceus CREC5 and Lactobacillus rhamnosus GG. Probioticated and un-probioticated kunun-zaki samples were designated PKZ and UPKZ, respectively. There was a significant difference in the viable count during storage. Viable counts of the LAB strains decreased with increasing storage time with P. acidilactici KU7 having the highest viability at the beginning and end of storage (3.43 ± 0.06 and 0.93± 0.12 x108 cfu/ml). There was a decrease in pH of the PKZ samples within the 1st and 3rd week with corresponding increase in lactic acid production (71.16 ± 0.01 – 441.39 ± 0.01). Marked increase in pH and a decline in lactic acid were observed at the 4th week of storage in all samples. Total soluble solids content of the beverage was observed to decrease with increasing storage time ranging from 8.25 ± 0.01-4.97± 0.01. There was no significant difference in pH and total soluble solids of UPKZ and colour of the PKZ and UPKZ samples during storage. All the PKZ samples were able to inhibit the growth of selected pathogens with marked variability amongst the samples. The UPKZ sample also showed slight inhibitory activity. The samples showed a decline in proximate and mineral composition at the end of storage. Sensory evaluation showed the PKZ samples were preferred over the UPKZ samples. This study shows that probioticated kunun-zaki can serve as a suitable non-dairy alternative to dairy probiotic formulations and would be of health benefits to potential consumers.
