A Case Report of Cerebral Toxoplasmosis in An HIV-Positive Patient: Risk of Possible Transmission through Contaminated Water/Food Texte intégral

Introduction: Toxoplasma gondii is an obligatory intracellular protozoan with a worldwide distribution. We reported here the cerebral toxoplasmosis in an Iranian HIV-positive patient. Case report: A 35-year-old woman that hospitalized at Golestan province, in summer 2016 because of dizziness, fever, and headache. After treatment, she showed severe pain and then paralysis symptoms. Magnetic resonance imaging revealed a small mass in the brain. In the previous analysis, she had shown the presence of HIV antigen using immunocytochemistry. The results of serological tests for toxoplasmosis showed toxoplasma IgG antibodies rate of 1785.6 mg/dl and toxoplasma IgM antibodies rate of 162.4 IU/ml. Conclusion: From public health importance viewpoint, it is a necessity to educate the people about possible transmission risk of T. gondii through contaminated food and drink sources. Unhygienic behaviors such as close contact with stray cats and also consumption of raw or semi-cooked meat must be avoided especially in case of immunosuppressed persons such as HIV-positive patients. On the other hand, detection of HIV/AIDS patients in a community is very important due to following them up with the diagnosis tests for all opportunistic infection especially toxoplasmosis.

Compatibility of CNF with three polysaccharides having different surface charges and backbones (chitosan, methyl cellulose, and carboxymethyl cellulose) was investigated. Chitosan (CH) incorporation reduced water absorption (WA) of CNF films (P < 0.05). CH molecular weight (Mw) (68, 181, 287 kDa) and amount (10 and 20 g/100 g CNF in dry basis) impacted moisture barrier, mechanical, antibacterial, thermal, and structural properties of CNF films. Regardless of Mw, CH incorporation (20 g/100 g CNF) decreased (P < 0.05) WA of CNF films, and high Mw (287 kDa) CH (20 g/100 g CNF) incorporation resulted in lower film water solubility while increasing film water vapor permeability compared with low Mw CH (68 kDa) incorporation (P < 0.05). CNF film with low Mw CH (20 g/100 g CNF) exhibited antibacterial activity against L. innocua and E. coli. Interaction mechanisms between CH and CNF were investigated through thermal, structural, and morphology analyses using DSC, FTIR, and SEM, respectively. CNF films with low or high Mw CH incorporation (20 g/100 g CNF) were further validated as surface contact films for fresh beef patties, showing effectiveness to prevent moisture transfer between the layered patties. This study demonstrated the potential of using CNF-CH composite films as water resistant and antibacterial packaging for foods with high moisture surfaces.

Increasing pressure affects water resources, especially in the agricultural sector, with cascading impacts on energy consumption. This is particularly relevant in the Mediterranean area, showing significant water scarcity problems, further exacerbated by the crucial economic role of agricultural production. Assessing the sustainability of water resource use is thus essential to preserving ecosystems and maintaining high levels of agricultural productivity. This paper proposes an integrated methodology based on the Water-Energy-Food Nexus to evaluate the multi-dimensional implications of irrigation practices. Three different indices are introduced, based on an analysis of the most influential factors. The methodology is then implemented in a catchment located in Puglia (Italy) and a comparative analysis of the three indices is presented. The results mainly highlight that economic land productivity is a key driver of irrigated agriculture, and that groundwater is highly affordable compared to surface water, thus being often dangerously perceived as freely available.

Pejerrey, Odontesthes bonariensis, is an euryhaline fish of commercial importance in Argentina. This work aimed to determine if water salinity affects the expression of genes involved in somatic growth (gh; ghr-I; ghr-II; igf-I), lipid metabolism (Δ6-desaturase) and food intake (nucb2/nesfatin-1). First, we identified the full-length cDNA sequences of Δ6-desaturase (involved in lipid metabolism) and nesfatin-1 (an anorexigen). Then, pejerrey juveniles were reared during 8weeks in three different water salinity conditions: 2.5g/L (S2.5), 15g/L (S15) and 30g/L (S30) of NaCl. Brain, pituitary, liver and muscle samples were collected in order to analyze mRNA expression. The expression of gh and ghr-II mRNAs increased in the pituitary of fish reared at S2.5 and S30 compared with the S15 group. The expression of ghr-I was higher in the liver of S30 group compared to S2.5 and S15. Igf-I mRNA expression in liver increased with the increment of water salinity, while it decreased in the muscle of S15 and S30 groups. Δ6-desaturase expression increased in S2.5 group compared to S15 in both liver and muscle. S30 caused a decrease in the Δ6-desaturase expression in liver compared to S15. The S30 treatment produced an increase in nucb2/nesfatin-1 mRNA expression in the brain and liver compared to S2.5 and S15. The changes in gene expression observed could help pejerrey perform better during salinity challenges. The S30 condition would likely promote pejerrey somatic growth in the long term.

A ‘meta-analysis’ was performed to determine effects of post-hatch food and water deprivation (PHFWD) on chicken development, performance and welfare (including health). Two types of meta-analysis were performed on peer-reviewed scientific publications: a quantitative ‘meta-analysis’ (MA) and a qualitative analysis (QA). Previously reported effects of PHFWD were quantified in the MA, for variables related to performance, mortality and relative yolk sac weight. The QA counted the number of studies reporting (non-)significant effects when five or more records were available in the data set (i.e. relative heart, liver and pancreas weight; plasma T3, T4 and glucose concentrations; relative duodenum, jejunum and ileum weight; duodenum, jejunum and ileum length; and villus height and crypt depth in duodenum, jejunum and ileum). MA results indicated that 24 hours of PHFWD (i.e. ≥12–36 hours) or more resulted in significantly lower body weights compared to early-fed chickens up to six weeks of age. Body weights and food intake were more reduced as durations of PHFWD (24, 48, 72, ≥84 hours) increased. Feed conversion rate increased in chickens up to 21 and 42 days of age after ≥84 hours PHFWD in comparison with chickens fed earlier. Total mortality at day 42 was higher in chickens after 48 hours PHFWD compared to early fed chickens or chickens after 24 hours PHFWD. First week mortality was higher in chickens after ≥84 hours PHFWD than in early fed chickens. The MA for relative yolk sac weight was inconclusive for PHFWD. The QA for plasma T3, T4 and glucose concentrations indicated mainly short-term decreases in T3 and glucose in PHFWD chickens compared to early fed chickens, and no effects of PHFWD on T4 concentrations. Relative weights of liver, pancreas and heart were lower after PHFWD, but only in the first week of life. A retarded development of gut segments (duodenum, jejunum and ileum) was found in the first week of life, measured as shorter, lower relative weight, and lower villus height and crypt depth. It is concluded that 48 hours (≥36–60 hours) PHFWD leads to lower body weights and higher total mortality in chickens up to six weeks of age, the latter suggesting compromised chicken welfare, but effects of PHFWD on organ development and physiological status appear to be mainly short-term.

Because many common foods are emulsions (mayonnaise, coffee creamers, salad dressing, etc.), a better understanding of lipid oxidation mechanisms in these systems is crucial for the formulation, production, and storage of the relevant consumer products. A research body has focused on the microstructural and oxidative stability of protein-stabilized oil-in-water emulsions that are structurally similar to innovative products that have been recently developed by the food industry (e.g., non-dairy creams, vegetable fat spreads, etc.) This review presents recent findings about the factors that determine the development of lipid oxidation in emulsions where proteins constitute the stabilizing interface. Emphasis is given to “endogenous” factors, such as those of compositional (e.g., protein/lipid phases, pH, presence of transition metals) or processing (e.g., temperature, droplet size) nature. Improved knowledge of the conditions that favor the oxidative protection of protein in emulsions can lead to their optimized use as food ingredients and thereby improve the organoleptic and nutritional value of the related products.

In a context of future population increase and intensification of water cycle by climate change, water demand for irrigation is projected to double. However, freshwater resources have been degraded the last decades especially in rivers via fragmentation, dam contraction and pollution. Flow alteration and degradation lead to 80% of freshwater ecosystem species loss. In this thesis, a robust and reliable Environmental Flow (EF) method was developed for global scale: the Variable Monthly Flow (VMF) method. This method allowed estimating EF deficit at global scale including its origin, timing, frequency and magnitude. By setting EFRs as priority user in a global vegetation and hydrological model (LPJmL), irrigation loss due to EFRs implementation were assessed at 30% leading to 5% global calorie loss. To maintain water allocation to humans and ecosystems under global change, food imports would require to increase by 15% especially from Latin America to South of Asia.

While the water–energy–food nexus approach is becoming increasingly important for more efficient resource utilization and economic development, limited quantitative tools are available to incorporate the approach in decision-making. We propose a spatially explicit framework that couples two well-established water and power system models to develop a decision support tool combining multiple nexus objectives in a linear objective function. To demonstrate our framework, we compare eight Nepalese power development scenarios based on five nexus objectives: minimization of power deficit, maintenance of water availability for irrigation to support food self-sufficiency, reduction in flood risk, maintenance of environmental flows, and maximization of power export. The deterministic multi-objective optimization model is spatially resolved to enable realistic representation of the nexus linkages and accounts for power transmission constraints using an optimal power flow approach. Basin inflows, hydropower plant specifications, reservoir characteristics, reservoir rules, irrigation water demand, environmental flow requirements, power demand, and transmission line properties are provided as model inputs. The trade-offs and synergies among these objectives were visualized for each scenario under multiple environmental flow and power demand requirements. Spatially disaggregated model outputs allowed for the comparison of scenarios not only based on fulfillment of nexus objectives but also scenario compatibility with existing infrastructure, supporting the identification of projects that enhance overall system efficiency. Though the model is applied to the Nepalese nexus from a power development perspective here, it can be extended and adapted for other problems.

La prestación del Servicio de examen bacteriológico y físico-químico del agua destinada al consumo humano y aquella que utilizan los distintos procesadores de alimentos a experimentado un importante crecimiento en relación a periodos anteriores, unas de las demandas significativa la generaron empresas dedicadas a la sanitización de depósitos y redes de distribución de agua, requeridos por establecimientos educacionales, organismos estatales proveedores de servicios públicos, entidades financieras, establecimientos médicos asistenciales, hoteleros y locales comerciales expendedores de alimentos, en función de verificar analíticamente la eficacia en los procedimientos de limpieza. Se continuó como en años anteriores atendiendo a firmas locales elaboradoras de agua de bebida envasada. Dentro de las actividades propias del servicio, un capítulo importante fue dedicado a la atención de la necesidad de Asociaciones Civiles y Cooperativas Apícolas Chaqueñas sobre las exigencias de servicios oficiales de fiscalización agroalimentaria, referidos a la calidad sanitaria del agua para la habilitación de sus salas extractoras de miel. En este sentido y directamente vinculado a las actividades de extensión, se brindó capacitación en el desarrollo de sistemas de gestión de calidad e inocuidad alimentaria (HACCP) a una de estas Cooperativas. Se prestó asesoramiento técnico y se brindó el servicio de Auditoría higiénico sanitaria externa a una empresa multinacional que provee servicio de comidas en la ciudad de Goya, Corrientes. Los resultados se brindan a los distintos actores en informes escritos, que durante el periodo del año 2017 arrojaron datos que indican el procesamiento de un total de 216 muestras de agua, de las cuales, 21 de ellas fueron examinadas mediante análisis físico-químico, el resto se procesaron microbiològicamente. El equipo docente trabaja en la formación de recursos humanos, capacitando profesionales, alumnos adscriptos y becarios de prestación efectiva de servicios.
