Microbial counts of meat products in selected areas in Baghdad (in Iraq)

Kabab, Kubba, Hamburger and roast beef are among the important meat products used in Iraq and other Arab countries. This investigation includes the study of the microbial counts of aerobic plates count (APC), Total coliform (T.C), Staphylococcus aureus (S.A). Molds and yeasts (M and Y) and the presumptive test for salmonella in four different localities in Baghdad. Some of the results were: It was found that average counts of APC, T.C.S.A. and M,Y of raw kababs in the four localities investigated were 10,000,000x308/g, 100,000x509/g, 100,000x205/g, 10,000x205/g, respectively. After roasting the kabab on an open fire, the APC, T.C.S.A. counts were 10,000x2/g, 117/g, 62/g, respectively. It was found that the average count of T.C. of the cooked Hamburger were reduced to 1,000x0.1/g and 9/g, respectively
