Studies on aging of rabbit muscle by electrical stimulation

This experiment was to study the effect of electrical stimulation of rabbit muscle on aging. One side of each of 4 carcasses was electrically stimulated using a 110V alternating current; the other side being used as the unstimulated control, and both were stored at 2 deg C. The rate of pH drop of muscle was appreciably more rapid in the stimulated side than the control side. Sarcoplasmic protein extractability of unstimulated side was higher than the electrical stimulated side during postmortem storage
