Gas diffusion and absorption of stain in wheat grains with various internal structures [helium diffusion]

Measurements of the coefficient of helium diffusion from the grain interior to the environment and of the transmission coefficient of stain solution absorbed on uncovered endosperm were made. The investigations were carried out on 3 samples of spring wheat grain. The levels of protein were: 12.4%, 14% and 16%. The increase of protein content caused a decrease of helium diffusion rate from the grains to the environment, which resulted in retarded grain-environment gas exchange
