Usefulness of certain muscles for estimation of tissue components in goose carcasses

The highest simple correlation was found between the meat weight of carcass and weight of m. anconeus longus, m. gastrocnemii laterale and m. gastrocnemii mediale, between fat weight and weight of m. fiburalis peroneus superficalis, m. gastrocnemii laterale and m. semitendaneus and also between bone weight and weight of m. anconeus longus, m. biceps brachii and m. gastrocnemii mediale. The results indicate that the weight of some muscles may be used as indices of the content of particular tissues in carcass of adult geese
