Biological activities of modified proteins in the direction from caseine to serum proteins in the production of "infant formula" were investigated. Cow and human milk were analysed. Notable differences in the amino acid content between the two types of milk were noticed. The cystine:methionine ratio is much higher in human milk. In cow milk there is comparatively more isoleucine, leucine lysine and phenylalanine and some other amino acids. A notable increase in biological activities of amino acids with the lowest activity was noticed in case when its protein content becomes similar to the protein content of human milk. The increase of the activity is higher so far as the protein content is closer to that of human milk. It is concluded that a better biological activity of the proteins of modified milk can be reached by adapting the caseine:serum proteins fraction ratio to the ratio in human milk.
