Total protein content and its fractions in the musculus longissimus dorsi in cattle

The protein content in the musculus longissimus dorsi of 50 bulls were determined. It was found that the total and stroma protein contents were related to a greater extent to the body weight than to the age of animals, whereas the level of sarcoplasmic and myofibrillar protein fractions were related both to age and body weight. The nonprotein nitrogen content was related only to the age of bulls. The fraction of denatured protein did not depend neither on the age nor the body weight
