The rose-hips and production of nonalcoholic beverages

Fruits of Rosa canina and Rosa rugosa can be used for non-alcoholic drinks production, either separately or mixed together. R. rugosa fruits are larger, flat-round of shape, with distinctly developed sepals and the percentage of pips is smaller compared with the pulp. Under equal cultivation conditions R. rugosa fruits have a higher dry matter and mineral substances content and contain more vitamin C. A much higher total acids content has been found in R. canina fruits. Fruit extraction with addition of water in the ratio of 1:1 and of pectolytic preparation gave satisfactory effects, both concerning the liquid part and the dry matter content. Addition of enzyme preparation increased the dry matter content of the extract, with easier straining and increased extract yield. Addition of preservatives, sodium benzoate and potassium sorbate, enables longer extraction during several days under usual temperature conditions. The beverage produced with 4% of dry matter from R. rugosa and R. canina rose hips has been evaluated as very pleasant.
