Physiological changes during ripening in normal and mutant ('Nr' and 'rin') tomatoes

Ethylene production and PG activity maintained much higher level in normal tomato (Lycopersicon esculentum Mill.) during ripening, compared with the ripening mutants. The protein band patterns of normal tomato were significantly distinguished from those of rin tomato in chlorophyll content, ripening mutants contained higher amount than normal ones and still showed green color. Acidity influencing fruit flavor showed higher level in the mutants than in normal tomatoes. Therefore, it can be conceived that the mutant tomatoes represent nonclimacteric characteristics. In nonclimacteric fruits, ripening may be delayed in the way that ethylene production and PG synthesis progress more slowly during ripening
