Sulphur dioxide application on table grapes in package

Results of the experiment show that the use of the potassium metabisulphite solution is not suitable for sulphur dioxide application to table grapes in packages because of the rapid release of SO2 and great concentrations of sulphur dioxide damage. By using "generator bags", sulphur dioxide application is more controlled, the SO2 concentration is lower, the dynamics of sulphur dioxide application is stabilized and grapes do not undergo any significant changes (sugar and acid content, weight loss and organoleptic properties).
