Dynamics of changes of milk properties in cows with acute acidosis

Acute acidosis was induced in three test cows by administration of 4 of saccharose per one kg of live weight. These cows and two control cows were left to starve for 72 hours. Soon afterwards, within 6-12 hours, the titration acidity of milk and whey became lower and the minimal values were gained within 24-48 hours (titration acidity decreased by as much as 2.8 in milk and 2.4 in whey, according to the SH). Although the titration acidity decreased, the time of milk clotting with rennet was reduced in the milk of all the three cows in 24 to 36 hours and the minimal values were recorded after 48-120 hours. Changes of titration acidity, corresponding in milk to caseine, whey protein and colloid calcium phosphate, were dependent on the individuality of the cows. As a results of starving in the two control cows the changes of titration acidity and rennetability were the same, but they were slower to set in. On the sixth to eighth day after the administration of saccharose, the titration acidity of milk and whey increased to the previous values in some cows, but the time of milk clotting with rennet was prolonged.
