A possible model of quality change during storage of foods

Requirements for the model: it shall be quantitive, that is to say, capable of being expressed in mathematical symbols, it shall express the statistical character of spoilage in time; it shall be independent of the initial quality of the product; it should take into account the storage conditions. The model thus obtained is a stochastic differntial equation, the solution of which is a stochastic process of time parameter, the variable being a normal distribution probability vector. A complete picture of the spoilage process is obtainable only on the basis of the results of the storage experiments. The basic data of evaluation are provided by the results of the sensory evaluation of random samples taken during storage from the basic population studied. The careful planning of the storage experiment is of fundamental importance from the point if view of the validity of the whole spoilage model.
