Effect of germination on the composition of antinutritive agents in plant seeds.

The germination of seeds of wheat, rye, chick-peas, millet, red clover, lentil, alfalfa, beans and radish was carried out using a device intended for home use. The trypsin inhibitor activity, phytic acid content, and the quantities of oligo-saccharides and tannic acid, causing flatulence were analyzed prior to germination, in germinated seeds and, in some cases, in isolated seedlings. In germinated seeds there was a consierable reduction in the trypsin inhibitor activity and a decrease in the quantity of phytic acid, while the oligosaccharides completely disappeared. The changes were more pronounced in isolated seedlings than in germinated seeds. The changes recorded as the results of germination are extermely favourable from the point of view of nutrition physiology, except for the increase in tannins, which takes place, however, to a level not yet dangerous to health.
