Studies on the ripening dynamics of various winter wheat varieties under non-rainy harvesting conditions.

On a brown forest soil, the effect of harvesting time was studied on the yield quantity and quality of early and medium early winter wheats. A detailed analysis was made of hectolitre weight, farinographic value and wet gluten quantity. For the early varieties examined the hectolitre weight decreased in the over-ripe stage, though to different extents. The variety Rana 2 had an above-average tolerance of over-ripening, the decrease in quantity being less and slower than for Baranjka, Mv 4 and GK Kincso. With the exception of Mv 4, the trend for farino-graphic value was similar to that for hectolitre weight. Quality is more dependent on variety than hectolitre weight. As the result of delays in harvesting, the greatest reduction in quality was recorded for GK Kincso. The changes in hectolitre weight as a function of harvesting time were the same for medium early varieties as for early ones. With respect to farinographic value there was greater difference between the varieties, the greatest deterioration being observed for Balkan. This variety has no tolerance of over-ripening so great attention must be paid to harvesting. Yubileinaya 50 is very tolerant of over-ripening, Mv 9 and Mv 10 are somewhat less so, but are also stable varieties. The wet gluten content is stable in the range close to the value characteristic of the variety, its quantity does not change even during the dead ripening stage.
