Effect of nitrogenous fertilization on protein content and amino acid composition in proteins

In three-year field experiments with winter wheat grown in three localities the effect of graduated nitrogen doses (0-80-120-160-200 kg of N.ha-1) on biological value of wheat grain was examined. The protein content and its forming from the urea unit increased by the graduated N-fertilization into the maximum at a dose 160 kg of N. The protein production was lower at the maximum nitrogen dose (200 kg.ha-1) as a consequence of yield depression and reduction of the protein content in grain. The biological value of wheat grain is reduced by the effect of nitrogenous fertilization (the highest biological value was achieved at the non-fertilized variant). Also the share of essential amino acids was the highest in the control sample. The limiting essential amino acids in wheat grain are methionine, isoleucine and lysine.
