The objective of this study is to know, the relationship of relative humidity and equilibrium moisture content to storage stability through the study of MSI pattern. The soybean seed used were Kerinci, Galunggung and Metro. Three relative humidity (RH) used were RH 56.5 percent, 65.3 percent and 70.5 percent on three desiccators with three saturated salt solution at 25,6 deg. C. The equilibrium moisture content condition were settled by adsorption statys method under 25,6 deg. C. Result of the experiment showed that 0 and n constants obtained of the equilibrium moisture content observed as calculated by Henderson equation, differences among the soybean seed varieties. Varietal differences were also observed in the MSI curves. Therefore storage of soybean at RH 70 percent or aw 0,7 with safety would have a different treatment among varietal example with lower temperature, lower moisture content or packaging method.
