Effect of germination on galactooligosaccharides of bean seeds

The changes in oligosaccharides in germinating beans (Phaseolus vulgaris L.) of four Polish cultivars: Polanka, Justynka, Igolomska and Augustynka were investigated by high performance liquid chromatography. After 72 hours of seed germination the decrease by 60-95 percent of Stachyose content was observed. No clear trend was found in raffinose level change during bean seeds germination. The decrease of stachyose content was accompanied with increase of sucrose concentration in seeds, due probably to stachyose degradation
