Nutritive and sanitary aspects of social nutrition of pre-school and school children in the Nis regia [Serbia, Yugoslavia]

The results bacteriological analyses of hands, working surfaces, vessels, cutlery and equipment in central and distributive kitchens in child's institutions in the region of Nis (Yugoslavia) are presented. The energetic and biological values of meals in kindergartens and schools have been established by the chemical analyses. The sanitary - hygienic state of the objects has been found satisfactory. The insufficient energetic value of meals, the high content of proteins, the high content of fats and the insufficient content of carbohydrates have been found.
