The effects of dietary fiber isolated from wheat endosperm (WEF) on cholesterol metabolism, gastrointestinal transit time and glucose tolerance were investigated in rats and compared with fiber free diet (DFF) and cellulose diet (CEL). (1) Dietary WEF, DFF and CEL groups did not suppress the elevation of serum cholesterol levels. (2) The mean of gastrointestinal transit time were 58.2 hr for WEF, 51.2 hr for CEL and 69.6 hr for DFF group. Fecal moisture were the same of all groups. (3) The diet containing WEF suppressed the rise of serum glucose levels in the presence of corn oil
