Developmental aspect of village based fish processing methods

Smoke-drying fish processing of Sardinella maderensis and Ethmalosa fimbriata which represent most of the landings of encircling ringnet fishing on pelagic species in Sierra Leone, West Africa, is described. Technical, social, environmental and economic factors are analyzed to ascertain the effects of proposed "technical improvements", such as Chorkor Smoking and Altona Ovens, on the fish processing community. It is shown that the traditional banda drying method, although less economical than improved techniques, such as chorkor smoker and Altona oven has an important role in the social fabric of the fish processing family and the fishing community.
