Characteristics of colored substances in red wines considering their age

In this study the results of parallel analysis of anthocyanin amount, ionized anthocyanins, color density and hue, flavylium cation amount, polymer and carbinol bases content in red wines, 1-3 years old, are shown. Some of these parameters have been used for determination of wine age on the basis of "chemical age" index.
