Regional and seasonal variations of nitrogen fractions in cheese milk in Quebec

Total (TN), non-casein (NCN) and non-protein nitrogen (NPN) were measured in milk samples collected weekly over a 14 month period in seven Quebec cheese plants by duplicate Rowland's fractionation followed by N Kjeldahl determination. Highly significant seasonal and regional (plant) effects were observed for all N fractions as well as for casein numbers relative to total (CP) and to true proteins(CPT), although differences among plants and months were small. CPT variances among plants and among months were about twice as low as CP variances. With the aim of pricing milk according to its cheese yielding capacity, true proteins instead of total proteins should be preferred. Seasonal variations of CP from this survey were accurately modelled by a second order oscillatory Fourier function.
