Respiratory activity of the normal and makapuno coconut endosperm

The makapuno endosperm had a slightly higher ATP content (0.056-0.137 micro mol ATP/g) than that of the normal coconut (0.036-0.113 micro mol ATP/g). For both types of endosperms, statistically significant differences in mean ATP content among the three stages of development were observed. Seven-to-eight mo old endosperm had the highest ATP content (0.113 micro mol ATP/g for the normal endosperm and 0.137 micro mol ATP/g for the makapuno endosperm), which was two-to three-fold higher than the values obtained for the more mature stages. The differences in the respiration rate of the normal and the makapuno endosperm (using discs as samples) were found to be statistically significant, with the values for the makapuno and endosperm generally twice those of the normal endosperm. For both types of endosperm, statistically significant differences in the mean respiration rates among three stages of development were noted: 7-8 mo old endosperm respiring more actively (1524 mg CO2/kg. - hr for the normal and 2735 mg CO2/kg. - hr for the makapuno endosperm for the 15 h experimental period) than the mature endosperms. At the 3rd hr of observation, the respiration rate of makapuno was 2- to 33-fold higher than the normal. The whole normal nut was observed to have a respiration rate which was two-to ten-fold lower than that of the discs
