Formation of mycotoxins in Fusarium-infected wheat under infavorable conditions of harvesting

The effect of atmospheric precipitation during harvest on the content and composition of mycotoxins in Fusarium-infected wheat has been studied. Deoxynivalenol (DON) was found to be the main contaminant of the wheat infected with Fusarium during grain maturation. The wetting of ripe grain resulted in reactivation of Fusarium graminearum, which started to synthesize zearalenone (ZN). The latter was detected in 68 percent of the 60 Fusarium-infected wheat samples tested at a concentration varied from 0.01 to 1.48 mg/kg, but only in one case the content of ZN exceeded the tolerance level. The accumulation of ZN was found to be accompanied with the redish-purple coloning of infested kernels (r=0.85). DON was detected in all the Fusarium-infected wheat samples tested. Its concentration correlated (r=0.81) with the proportion of the kernels infected with Fusarium during maturation. Neither zeralenone nor acetyl-DON were found in the wheat samples tested
