Effect of moisture contents on fungal incidence, germination, splitting, breakage and colour in dried chilli during storage [in Bangladesh]

Fully matured ripe chillies with moisture content of 73.81% were equilibrated to moisture levels of 16.40%, 13.69%, 12.00%, 10.76%, 8.08% and 7.05% by sundrying and stored in motka, the inside of which was lined with polyethylene of 0.05 mm thickness. Chillies with 8.08% and 7.05% initial moisture contents were found in good conditions after 10 months of storage in respect of fungal incidence, colour, germination, splitting and breakage. Fungal incidence was less in chillies with 8.08% initial moisture content, and almost nil in chillies with 7.05% initial moisture content. Percent germination was found 82.00% and 82.67%, while percent splitting was found 4.44 and 5.44 and percent breakage 2.16 and 4.00 in chillies with 8.08% and 7.05% initial moisture contents, respectively. The colour of these chillies was found bright red and that of seeds was yellow. Chillies stored with other initial moisture contents were found in bad conditions in respect of storage parameters.
