Chemical changes in grape fruit (Citrus paradisi MACF.) during maturation and storage

An experiment was conducted to see physico-chemical changes occurring in grape fruit (cvs. Thompson, Marshseedless and Foster) on different harvesting dates from October 1, 1988 to January 29, 1989. TSS values in all the cultivars increased progressively with advancement in harvesting. Maximum acidity was noted in Marshseedless followed by Foster and Thompson, when fruits were harvested early. Maximum ascorbic acid content was available in all cultivars on December 30, 1988. After that no further increase was noted. Total sugar contents became constant since December 15, 1988. Non-reducing sugars behaved like total sugars. While maximum reducing sugars were noted on January 29, 1989. Fruit of all cultivars obtained maximum sugar/acid ratio during November and December, 1988.
