[Method of preparing a filling for a confectionery product]

The invention refers to confectionery industry, namely to the methods of producing confectionery products for dietetic nutrition, for example, wafers, sweets, which may be used in complex treating of patients subjected to radiation effect and other damaging environmental factors. When preparing the filling the main components as follows are used: wafer crumbs, confectionery fat, sugar powder, aqueous solution of citric acid, cryopowder from aronia pomace. The cryopowder from aronia pomace is found to consist of a complex of biologically active substances and fiber in the ratio 2:98. At its interaction with aqueous solution of citric acid the conditions are created for releasing an anthocyane pigment from intercellular space and its transition to the solution. The fiber remains insoluble as a result of strong structure of polymer chains. Cryomechanical processing of the aronia pomace results in breakage of intercellular structure and activation of shortened polymer chains. This procedure causes speedy reaction between the fiber and water. The fiber swells and the conditions are created for direct transition of the solid phase into gel-like one without additional thermodynamic processes. The soaking of the aronia pomace cryopowder in the aqueous solution of citric acid results in creating a suspension with gel-like particles. Antiradiation effect of the aronia pomace cryopowder is caused by sorbtive effect of the fiber in gel-like condition removing all the toxic elements and producing complex salts of anthocyane group with heavy metals 137 Cs and 90 Sr. The studies conducted on the Chernobyl contingent have revealed that the patients who obtained the wafers with the filling prepared according to the method applied have shown the stimulation of the effect of the treatment conducted. A batch of the wafers has been produced by the JSC "Kharkiv Biscuit Plant" which were recommended for use in kindergartens, sanatoria and clinics
