Microbiological quality of hydrocolloids with regard to their origin, basic properties and use as food additives is discussed. Great attention is paid to microbial decomposition of various hydrocolloids as well as their effects on microbial growth. 26 samples of hydrocolloids from 10 European renowned firms were examined, considering hygienically relevant groups of microorganisms. The results are compared with European and domestic specifications
