Biofilms on dairy plant surfaces: what's new?

A previous report briefly reviewed biofilm formation, that is, bacterial adhesion, growth and colonization of surfaces, as well as the techniques available for detecting and/or enumerating adhering bacteria, and their limitations. In the present report, we first discuss the definition of biofilm which is still being debated. Secondly, two major concerns encountered on dairy plant surfaces, Listeria monocytogenes on open surfaces, and thermally resistant bacteria in dairy processing lines, are documented. Thirdly, this report deals with biofilm resistance and adaptation to environmental stresses, phenomena that may explain why it is almost impossible to get rid of bacterial surface contamination through cleaning and disinfection. Lastly, new strategies for controlling surface hygiene are presented. There is no reference made on detection or enumeration technique for adhering bacteria, since there has been no recent breakthrough in this field.
