The microstructure of whole milk powder and UHT plate heat-exchanger deposits produced from the milk of AA and BB beta-lactoglobulin phenotype cows

The purpose of this study was to examine the microstructure of low heat (72 degrees C for 15 s) beta-lactoglobulin (beta-Lg) AA, AB and BB type whole milk powder (WMP) and the microstructure and composition of the plate heat-exchanger deposits (foulant) produced from the reconstituted WMPs. There was little difference in the microstructure of the beta-Lg AA, AB and BB WMPs. Thus the marked differences in the fouling behaviour was not explained by the microstructure of the WMPs. The chemical composition of the foulants differed markedly. All foulants had a similar protein concentration. However, the beta-Lg AA, AB type foulants had high fat concentrations and the P-Lg BB type foulant contained a high ash concentration. Marked differences in the microstructure of the beta-Lg AA, AB and BB foulants were observed, reflecting the differences observed in their compositions.
