Some biochemical factors and electrical conductivity of milk of cows from Lublin region

The aim of these studies was to estimate the level of change in ammonia, urea, ATP acid concentration, and electrical conductivity of milk in relation to the intensity of mammary gland inflammation. The quarter milk of 440 black-white cows with a contribution of Holstein-Friesian blood with healthy mammary glands and showing higher somatic cell content was investigated. The state of health of the mammary glands was estimated by analysis of somatic cells, adenosinetriphosphorous acid, ammonia, urea content, and electrical conductivity. The somatic cell count was estimated by Fossomatic apparatus; ammonia and urea levels - by Beagle and Fawcett's method; ATP - luminometrically by modified Olsson's method, and electrical conductivity - conductometrically by N5721 M. The secretion of a healthy mammary gland was found to consist of - among others 1.5 mM ATP per litre, 0.366 mg NH3 per litre, 0.175 mg (NH2)2CO per litre, and showed 0.580 S per m electrical conductivity. ATP level ranged from 19.8 mM per litre at 1000000 somatic cells per cubic cm to 194.0 mM per litre above 5000000 somatic cells per cubic cm. Ammonia concentration was 0.570 mg per litre at 1000000 somatic cells per cubic cm up to 1.330 mg per litre at 5000000 somatic cells per cubic cm. Similarly, the increasing trend was displayed by urea - from 0.198 mg per litre at 1000000 somatic cells per cubic cm to 0.623 mg per litre at 5000000 somatic cells per cubic cm. Electrical conductivity increased from 0.630 S per m to 0.943 S per m. Ammonia, urea and ATP acid levels as well as electrical conductivity of cow milk increased significantly (p less than 0.05) with increase in number of somatic cells.
