Protein quality and antinutritive constituents in faba beans in Bulgaria

Eight cultivars of Vicia faba L var equina Pers. were selected from the gene bank for their high yield and cool resistance. Their nutritive value was determined by analyzing their contents of protein, crude fiber, extracted fats and ash, in addition to calcium and phosphorus. Amino-acid composition of the faba bean varieties was analyzed by exchange chromatography. The antinutritive constituents vicine, convicine and dopa-glucosides were also determined. The examined faba bean cultivars may be useful as well-balanced plant food pools. The common amino-acids varied from 49.72 g per 16 g N to 98.58 g per 16 g N, and the essential amino-acids from 18.08 g per 16 g N to 38.61 g N. The total glucoside content varied from 0.58 percent to 0.76 percent d.m. The vicine/convicine ratio indicated that cultivars Daffa, Maris Beaver and Maris Beagle have low antinutritive constituents
